SIMPLE CHOCOLATE BARK FOR ICE CREAM

Annie Diamond of "Most Lovely Things" gave the easiest possible recipe for a festive chocolate bark.  Great for putting on ice cream for a summer or barbecue treat.

 

Preheat oven to 175 degrees.  Line a cookie sheet with parchment paper.

Lay your different chocolate bars on the paper, breaking them up.

 

Melt for 4 minutes in the oven.  Remove, and add your other ingredient topping options while the chocolate is still melty.

 

Ingredients suggested by Annie:

 

  • Chocolate bars –dark, milk, white, or a combination 
  • Maraschino cherries
  • Sprinkles
  • Ice cream cones. Traditional cone or sugar cone
  • Mini marshmallows
  • Chocolate chips
  • Peanuts 
  • Sea salt
  • Classic fudge-filled tip ice cream candy cone cookies (I use Trader Joe’s)

 

Refrigerate or freeze until hard, then serve atop ice cream as a "sundae".

 

I made the bark last night, and it set up perfectly in the fridge overnight.   We used 3 Lindt bars--  dark chocolate, "intense orange" flavored chocolate, and milk chocolate.  She suggests swirling the different flavors together with a toothpick while it's still melted, which I did before adding toppings.

 

Our store didn't have those cute little ice cream cone cookies, but I used maraschino cherries, sprinkles, Spanish peanuts, coconut, and a few chocolate chips and caramel chips.   We're going to have the bark today after our barbecued hot dogs, served over plain coffee ice cream. 

 

Her 'sundaes' looked good!

I don't know if anyone else remembers a product called "Magic Shell".  It is poured over ice cream as a liquid, then hardens into a solid.

 

I make it in the microwave from 1/4 cup refined coconut oil, 3 oz of chopped bittersweet chocolate bar, and a pinch of sea salt.  Cook at 50% power until smooth, stirring every 30 seconds.

That chocolate looks delicious.  It would never even make it to be ice cream topping.

 

If I know me, and I do, I would just be popping pieces in my mouth.  I am an admitted chocoholic.

 

Aldi sells some really great European chocolate bars.  They are better than Lindt, IMO and less expensive.
