SHRIMP PAD THAI

I originally posted this many years ago.  It is a simple dish that my children loved.  It is definitely not authentic Thai food but is quick and easy for a week night dinner (especially when it is hot).

 

8 ounces wide rice stick noodles
1/3 cup ketchup
2 T sugar
3 T fish sauce
1/2 t crushed red pepper
2 T vegetable oil, divided
1 pound medium shrimp, peeled and deveined
2 large eggs lightly beaten
1 cup fresh bean sprouts
3/4 cup (1 inch) sliced green onions
1 t minced garlic
2 T chopped dry roasted peanuts

 

Place noodles in a large bowl. Add hot water to cover, let stand 12 minutes or until tender drain or follow directions on the brand you purchase.

 

Combine ketchup, sugar, fish sauce and pepper in a small bowl.

Heat 2 t oil in a large nonstick skillet over medium-high heat. Add shrimp saute 2 minutes until shrimp are done. Remove shrimp and keep warm.

 

Heat 4 t oil in skillet over medium-high heat. Add eggs and cook until soft scrambled, stirring constantly. Add sprouts, green onion and garlic, cook 1 minute. Add noodles, ketchup mixture and shrimp. Cook about 3 minutes or until heated through. Sprinkle with peanuts.

 

This came to mind because I made it last night for dinner.  I added a little more ketchup than 1/3 cup.

Hi, @DiAnne. I love recipes like this! Not really authentic, but sort of. Thanks so much! I'm definitely going to give it a try.
