Serves 4
Heat oven to 450 degrees. Coat large rimmed baking sheet with nonstick cooking spray.
Toss l lb. fingerling potatoes, 2 cups trimmed Brussels sprouts, 4 carrots (peeled and cut into 1-inch pieces) and 4 large shallots (cut into wedges), with 2 tablespoons olive oil.
Season with 1/2 teaspoon each of salt and pepper.
Bake 30 minutes, turning once.
Season 4 salmon filets (6 oz. each) with 1 teaspoon smoked paprika, 1/2 teaspoon salt and 1/4 teaspoon black pepper.
Add to baking sheet and bake 15 minutes.
