I just love this recipe and suggest that the sour cream sauce not be skipped!  The recipe was one of Lillbitmissty's.  I miss her postings and hope she is ok. 
 
APPLE LASAGNA
 
Filling:
1 lightly beaten egg
2 cups shredded cheddar cheese
1 cup part-skim ricotta cheese
1/4 cup sugar
1 tsp almond extract
2- 21oz. cans apple pie filling (or make your own version)
6 lasagna noodles - cooked, rinsed and drained
 
Mix egg →→ extract. Set aside
Spread 1 can apple pie filling into a 13 X 9 baking dish, coated well w/ nonstick spray. Top w/ 3 cooked lasagna noodles, then cheese mixture. Layer with 3 more lasagna noodles, and 2nd can apple pie filling.
 
Topping:
1/3 cup flour
1/4 cup quick cooking oats
dash of nutmeg
1/3 cup brown sugar
1/2 tsp. cinnamon
3 TBS. butter
 
Cut butter into dry ingredients until crumbly. Sprinkle over filling. Bake at 350° - uncovered - for 45 - 50 mins, or until bubbly & heated through. Let stand at least 15 mins.
 
Sour Cream Sauce (optional):
Mix 3/4 cup sour cream w/ 3 TBS brown sugar
 
Serve a dollop atop each serving of apple lasagna.

Oh Thank you for posting that picture!!!!

 

I find it so helpful to see what I am aiming for!

 

I have your recipe stored on my computer in Word....when I copy and paste, the picture doesn't come through...just an X !!!

 

And now I can't paste pictures into my AOL email!  I have to switch to GMail to get a picture to come through.

BREAD PUDDING

 

This Pecan Pie Bread Pudding has the signature sweet, sticky, crunchy flavor of pecan pie married into a delicious dessert or breakfast treat.

  • 6 cups Italian or French bread, cubed
  • 2 cups milk
  • 3 eggs
  • 1 cup light corn syrup
  • 1 cup sugar
  • 1 tsp vanilla
  • 1/2 cup brown sugar
  • 1 1/2 cups pecan pieces
  • 1/4 cup butter, melted

Instructions

  1. Cube the bread into bite size pieces- it should be a day or two old, not fresh. Place bread in a large bowl. 
  1. Whisk together eggs, milk, vanilla, and white sugar. 
  2. Pour over bread to coat completely; let soak for 10 minutes. **I personally let it soak much longer....
  3. Pour the bread mixture into a greased 9 x 13 pan.
  4.  In a medium bowl, combine corn syrup, brown sugar, and melted butter. 
  5. Pour the butter mixture over the bread and top with pecans. 
  6. Bake at 350 degrees for 35-40 minutes.

Wow, ladies!  So many intriguing recipes!  I'm so excited for the upcoming holidays - my favorite time of year for sure!

Thank you for posting that photo, it's even better than I imagined.  I think I might try it next time I have leftover cooked chicken... maybe even ground beef?
