Reuben Sandwich Casserole with

Corned Beef and Sauerkraut

 

Ingredients

  • 1/2 to 1 pound corned beef (cooked, and diced or sliced)
  • 1/4 cup Thousand Island salad dressing
  • 1 (16 oz) can sauerkraut (or bag of sauerkraut, drained and rinsed)
  • 8 ounces Swiss cheese (shredded)
  • 6 slices rye bread (crumbled or cut into cubes)
  • 1/4 cup butter (melted)

Steps to Make It

 

  1. Gather the ingredients.
  2. Heat the oven to 350 F.  Grease a 9-by-13-inch baking pan.
  3. Spread the corned beef over the bottom of the prepared baking dish and dot with spoonfuls of dressing.
  4. Spread the sauerkraut over the top and sprinkle with the Swiss cheese.
  5. In a bowl, toss the crumbled rye bread with the melted butter.
  6. Sprinkle the breadcrumbs over the sauerkraut layer.
  7. Bake in the preheated oven for about 30 minutes, or until hot and bubbly and the crumbs are lightly browned.
    Serve and enjoy!

Soft Caramel Snickerdoodles

  🍁🍂🍁🍂🍁🍂🍁🍂🍁🍂🍁🍂

 

  • 3 cups (375g) all-purpose flour 
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon cream of tartar
  • 1/2 teaspoon salt
  • 1 cup (16 Tbsp; 226g) unsalted room temp butter
  • 1 cup (200g) granulated sugar
  • 2/3 cup (135g) packed light brown sugar
  • 2 large eggs, at room temperature
  • and 1/2 teaspoons pure vanilla extract
  • 12 soft caramels, cut in half

Topping

  • 1/4 cup (50ggranulated sugar
  • 1 and 1/2 teaspoons ground cinnamon

Instructions

Whisk the flour, baking powder, baking soda, cream of tartar, and salt together until combined. Set aside.

 

In a large bowl using a handheld or stand mixer fitted with a paddle attachment, beat the butter on high speed until completely smooth and creamy, about 2 minutes.

 

Add the granulated sugar and brown sugar and beat on medium high speed until fluffy and light in color. Beat in the eggs and vanilla extract on high speed. Scrape down the sides and bottom of the bowl as needed.

 
On low speed, slowly mix the dry ingredients into the wet ingredients until combined. The cookie dough will be thick.
 
Cover dough tightly with aluminum foil or plastic wrap and chill for 1 hour* and up to 3 days.
 
Remove cookie dough from the refrigerator. If the cookie dough chilled longer than 3-4 hours, let it sit at room temperature for about 20 minutes. This makes the cookie dough easier to scoop and roll.
Preheat oven to 350°F (177°C). 
 
Line two large baking sheets with parchment paper or silicone baking mats. 
 
Combine the topping ingredients. Set aside.
 
Scoop a scant 2 Tablespoons of cookie dough. Break in half. Make a thumbprint into the bottom of one half and press a caramel half inside, as shown above. Place the other cookie dough half on top and roll the dough between your hands to make a smooth ball. Make sure the caramels are completely wrapped inside.
 
Roll into cinnamon-sugar topping and place on baking sheet. Repeat with remaining cookies.
 
Bake the cookies in batches for 11-13 minutes, or until very lightly browned and crisp looking on the edges.
The baked cookies will look extremely soft in the centers when you remove them from the oven. Allow to cool for 5 minutes on the cookie sheet. Transfer to cooling rack to cool completely.

I'm a fan of the simple snickerdoodle, not sure if these would be overkill, but it was too interesting a recipe to ignore.

Back in 2020, @sabatini posted this fantastic recipe.  I hope she doesn't mind me reposting it since it is almost Turkey time!!

 

I have made this many times since we smoke turkeys all year....my DH LOVES it!

 

It seems kinda odd, but it really works!!  You can customize it to your liking too.  I have added small diced veggies and pots too.  I use a 10" or deep dish pie pan.

Turkey Puff-Over

Puffs up on sides like a popover. Great recipe for leftover turkey or chicken.

* If you have some & are up for it, add 1/2 C sliced & sauteed mushrooms to the turkey mixture. (Totally not necessary.)

 

*Preheat oven to 425.

 

Ingredients:

2T plus 1/4 cup butter

1/2 cup chopped onion

3/4 cup turkey stock

2T plus 3/4 cup flour

2 eggs

3/4 cup milk

2 cups chopped turkey

1/2 tsp salt

few grinds pepper

1/3 - 1/2 C grated cheese (we use cheddar)

*sour cream - to serve

 

Directions:

Sauté onion in 2T butter till soft.

Add 2T flour, stir to combine and cook for a few minutes.

Add turkey stock, & whisk till smooth & thickened.

Stir in turkey meat, remove from heat.

S&P to taste.  

 

Beat eggs lightly w/ milk.

Add 3/4 cup flour & 1/2 tsp salt.

Whisk briskly till smooth.

 

Place 1/4 cup butter in 9 or 10" pie pan or cast iron skillet. Set in oven to melt.

When butter is bubbly, pour batter into center of pan.

Spoon turkey mixture into center of that, leaving a border of batter.

Sprinkle w/ cheese & bake for 25 min., or until puffed and golden. 

 

Serve w/ a dollop of sour cream & don't forget the cranberry sauce!

Ultimate Veggie Whole Wheat Crust Pizza

 

INGREDIENTS

  • 1 batch whole wheat pizza dough or 
    1 pound store-bought pizza dough
  • 1 cup pizza sauce or marinara sauce
  • 2 cups baby spinach
  • 2 to 3 cups (8 to 12 ounces) shredded low- moisture part-skim mozzarella cheese
  • 1/2 cup jarred artichokes, cut into 1/2” pieces
  • 1/2 cup fresh red and/or orange bell pepper,
    cut into narrow 2″ strips
  • 1/2 cup red onion, cut into thin wedges
  • 1/2 cup halved cherry tomatoes
  • 1/2 cup pitted Kalamata olives, halved lengthwise
  • 1/2 cup sliced almonds (optional)

  • Optional garnishes: Fresh basil (small leaves or torn), red pepper flakes and/or finely grated Parmesan cheese

INSTRUCTIONS

  1. Preheat the oven to 500 degrees Fahrenheit with a rack in the upper third of the oven. If you’re using a baking stone or baking steel, place it on the upper rack.

  2. Prepare dough through step 5.

  3. Spread pizza sauce evenly over the two pizzas, leaving about 1 inch bare around the edges. Evenly distribute the spinach on top of the sauce, followed by the cheese (all 3 cups if you want a cheesy pizza ).

  4. Top the pizzas with artichoke, bell pepper, red onion, tomatoes, olives and almonds (if using).

  5. Bake pizzas individually on the top rack until the crust is golden and the cheese is golden and bubbly, about 10 to 12 minutes (or significantly less, if you’re using a baking stone/steel—keep an eye on it).

  6. Transfer pizzas to a cutting board and sprinkle with fresh basil, red pepper flakes and Parmesan, if using.     Slice and serve!

Leftover pizza keeps well in the refrigerator for 4 days or for several months in the freezer.

ZUCCHINI Casserole

 

3 cups of ZUCCHINI, bite-size pieces

2 carrots, shredded (optional)

1 small onion, chopped

1 can Cream of Chicken soup, undiluted

1/2 cup sour cream

1/2 pkg. Pepperidge Farm Stuffing Mix, crushed

1/3 cup melted butter

 

Lightly cook ZUCCHINI and drain.  Mix stuffing with butter; set aside.  Mix ZUCCHINI, carrots (if using), onion, soup and sour cream together.  Add half of stuffing mixture with it and combine.  Put into a 2 or 3 quart casserole dish.  Top with remaining stuffing.  Bake at 350, uncovered, for 25 minutes or until brown and bubbly.

Why, hello @RespectLife. I just wanted to thank you for giving me such an unexpected compliment! It really made my day.

 

I'm so glad you enjoy that recipe! I actually don't remember where I originally found it, but it was back in the early 80s. When my mom had it for the 1st time, she said 'That recipe could win a prize!' Smiley Very Happy

It's a family favorite of ours too.

 

My sis makes it frequently, & when she hosts Thanksgiving & has out of town guests, it's become her staple for the day-after meal.
