It is Copper River Salmon season in Seattle and I just fixed some for dinner. I cooked an extra piece with just salt and pepper to make salmon salad. It is pretty simple.

Cooked salmon fillet, skin removed
Finely minced celery
Finely minced red onion (sometimes I use green onions)
Fine zest of lemon
Juice of lemon (or half if lemon is very large)
Mayonnaise to moisten (however much you like)
Salt andj pepper to taste.

Break up salmon in bowl. Add celery and onion and mix. Add zest, lemon juice and mayonnaise and mix. Salt and pepper to taste.

Very simple but we love it. I like to serve it on crackers or a piece of toast.
