SALMON IN PARCHMENT WITH SWEET CORN, BASIL AND TOMATOES

This can be made ahead and kept in fridge until dinner.  

 

2 T unsalted butter
2 leeks, white part only, diced
Kernels cut from 3 ears of corn
8 leaves fresh basil, chiffonade
3/4 pint cherry tomatoes, halved
6 6 to 8 oz salmon fillets, skin and pin bones removed
6 T prepared basil pesto
Kosher salt and pepper to taste
Grated zest of 1 lemon to garnish
6 16 inch sheets of parchment paper, folded in half and cut into semicircles

 

Melt butter in saute pan.  Stir in leeks and saute till they begin to wilt.  Add corn until they begin to caramelize.  Stir in the fresh basil and tomatoes.  Remove from heat.  

 

Take one piece of parchment at a time and lay it open on the counter.  On the lower portion of the fold place 2 large spoonfuls of the corn-tomato sauce snug against the middle line leaving a generous ring of paper.  Place salmon fillet over the sauce.  Spread 1 T pesto over the salmon and another spoonful of the sauce on top of the pesto.  Add a sprinkling of kosher salt and a grind or two black pepper.  Fold the top side of the parchment over the salmon side.  Starting at one end make small overlapping folds as you move along the outside edge, tucking the last fold under the sealed packet.  Place on a sheet pan and continue with the other fillets.  Refrigerate.

 

To cook:  Bake the salmon on the sheet pan in a pre-heated 450 F oven for 15 minutes.  

 

To serve:  Use shears to cut a slit in the center of package.  Garnish with freshly grated lemon zest and serve immediately.  

 

Make sure you use your fingers to make sharp creases in the folds.

I made this last night for dinner and it was simply delicious! I doubled the recipe for my gang and made individual packets for the kids. They just loved it! Thank you for sharing another wonderful recipe!
