I was in Walmart the other day and found a "tear off" recipe display with Ro*tel and avocados. I made it today, and we loved it - fresh, and full of flavor and easy to make. Just wanted to share!
3 ripe avocados, peeled, seeded
1 can rotel, your choice of spicyness, drained
3/4 cup chopped onion
1 teaspoon lemon or lime juice
1/2 teaspoon salt
ground black pepper to taste
tortilla chips
Mix avocados ( I used a pastry blender to smash them up as we like our guac chunky, but you can mash yours smooth if you prefer). Mix in drained rotel, onion, lemon or lime juice (I used lime) and salt. Stir in pepper to taste. Serve with chips, and the next time I make it for us, I will also serve with margaritas!
