Roasted chicken thighs

This recipe is from Cristina Ferrare's cookbook A BIG BOWL OF LOVE.  I have made it twice over the past month.  She suggests a vegetable couscous to go along with it.  I think it is a good choice when guests come calling.  Easy and delicious.

Did you cut the recipe in half?

Yes, I made it with 6 and it is easy to halve all the ingredients.   They reheat well and you can create some nice meals with the pulled chicken--tacos, soups, etc

@maisiebrook Thanks! This looks like such an easy recipe! I love licorice, but DH not so much. So, I might leave out the fennel and tarragon.

Does anyone think like I do that 1 hour 45 minutes is a long cooking time?
