This looks so good. Love Okra.  Most people who don’t like Okra have only had it boiled. That’s gross. It has to be Frye’s or roasted. Thanks

I have enjoyed this a couple of times since you posted it.  Thanks!

I roast most of my veggies but would not have tried okra.  I keep roasted veggies in the fridge for snacks!    I use EVOO, S&P, and sometimes garlic and/or thyme.

@Zhills So very glad you have enjoyed them.  I have also seen roasted thinly sliced cabbage in pictures.

I tried roasted cabbage once.  Really good.  I love cabbage but it doesn't love me!  Worth a try for sure.

I roast carrots, broccoli, cauliflower, green beans, okra, zuchinni and squash, bell pepper and onions.  Never boil a veggie again!

@ECBG

This looks super delicious!

Never thought of roasting okra but I seen I'm going to have to try it sometime.  Thank you for sharing.

@sceniccoast Whole okra (you can also use frozen) is 15 min per side, while squash and zucchini cut in long pieces or whole Brussels sprouts are slightly less.

All of the pictures are posted.

Good morning @ECBG

Thank you, I've roasted plenty of vegs & my all time favorite so far is butternut squash.  Yum

Have a good day, heading to work now.
