Roasted Red Potatoes - Recipes?

I love cooking roasted red potatoes.  I could have them every night.  I usually just cut them, put them in a bag with olive oil, garlic powder and paprika.   I cook them for about 45 min.   

 

Interested to see what other "topping" you all use if you cook them this way.

I use olive oil, Lipton Onion Soup Mix (dry) and then sprinkle with parmesan cheese before I put them in the oven.

I toss halved red new potatoes with olive oil, a pinch of salt, pepper, and fresh rosemary. Utterly simple and utterly delicious roasted.

Yum... all your ideas sound fabulous!

 

Thanks for sharing.   I just find these potatoes so easy to prepare and they go with any dish really.   

 

My local store this week had them on sale for 3 lbs for $1.00.   I loaded up!

10 minute Pan Roasted Lemon Potatoes with Dill
 
 
Serves: serves 4 to 6
Ingredients:
  • 1 lb. baby red or yellow potatoes
  • 3 to 4 tbsp. butter
  • 1 lemon, juice of
  • 2 tsp fresh snipped dill (I use Gourmet Garden Herbs)
  • Salt and pepper to taste
Instructions:
  1. Place the whole potatoes in a shallow, microwave safe glass bowl in a single layer (you may need to do two batches if they don't all fit). Cover the bowl with plastic wrap, making sure to the potatoes are not touching the plastic wrap.
  2. Microwave on high for 4 minutes and 30 seconds. Be careful when removing from microwave, as the dish will be very hot. Uncover and slice each potato in half.
  3. Meanwhile heat a large cast iron skillet over medium heat. When the skillet is hot toss in the potatoes, 3 tbsp of butter and ½ of the lemon juice, stir to coat the potatoes. Season with salt and pepper, and the dill. Let the potatoes caramelize in the pan, by stirring just twice per minute, until they are golden brown on all sides. Add more butter and more lemon juice if desired. Enjoy!

 

I take these potatoes after microwaving and smash them, brush with oil or butter and your favorite spices and roast at 400 until browned. 

Quick and yummy!

Sorry, I keep my Breville oven at 400.  Since they are already cooked, you only need to brown them.

I don't microwave mine.  I put them in my toaster oven on 400 degrees for 45-50 min.

I put my potatoes in the roaster right beside my meat.  Beef, chicken, pork and lamb roasts all make great juice to be soaked up by the potatoes.  Sometimes when the roast is done, I leave the potatoes in the roaster by themselves and put them under the broiler until they are brown and all of the juice is absorbed.   Ymmmmm

I love roasted red potatoes.  I usually toss them with olive oil, fresh lemon juice, Italian seasoning and salt.
