River Rat's Moroccan Chicken Soup

I thought I'd share this recipe in honor of River Rat. She had some great recipes that she shared, but this is my favorite. I'm not much on soup's, but I make this one a lot. Between this one and the tortilla soup my husband made, we had the two whenever we didn't feel up to par and they did seem to help. I'm sure it's the idea of all the chicken broth, right!!!

Moroccan Chicken Soup

4 cups chicken broth

3 cloves garlic, minced

2 Tbs. honey

2 tsp. ground cumin

1/2 tsp. ground cinnamon]

1 can (14.5) diced tomatoes, undrained

1 large green pepper, cut into 2" long strips (about 2 cups)

1 medium onion, chopped, (1 cup)

1/2 cup raisins

1 pound boneless, skinless chicken thighs, cut up

Hot cooked orzo (optional)

Stir the broth, garlic, honey, cumin, cinnamon, tomatoes, green pepper, onion and raisins in a slow cooker. Add the chicken.


Cover and cook on low for 8 hours or until the chicken is cooked through.

Place about 1/2 cup cooked orzon centered on top of each serving bowl.
