Ingredients
  • One bag of coleslaw mix
  • 1 pound corned beef cut into strips
  • 2-3 tbsp butter
  • 1 cup Swiss cheese
  • Scallions
Russian Dressing
  • 1 cup mayonnaise
  • 1/4 cup sugar free ketchup
  • 4 tsp horseradish
  • 1 tsp hot sauce
  • 1 tsp Worcestershire sauce
  • 1/2 tsp salt
  • pinch of pepper
Instructions
  1. Melt butter in skillet.

  2. Add corned beef and saute covered for 5 minutes.

  3. Now, add coleslaw, cover and cook for 5 minutes.

  4. Stir coleslaw and corned beef and top with cheese. You can cover skillet and allow the cheese to melt or put in the oven and broil until cheese is bubbly.

  5. Drizzle with dressing and top with scallions.

This looks and sounds really good @Reconnaissant .  Of course since I'm a lazy cook, I'll just use bottled russian dressing.  Can't wait to try it.  Thank you!

Thanks for the recipe, @Reconnaissant !  Do you think it would taste ok if I subbed Thousand Islands for the Russian dressing?

This sounds quick, easy and yummy.  Get corned beef sliced think at the deli.

Yum! This sounds like it would be good as a hot/warm appetizer served with triscuits or rye flavored crackers.

@Reconnaissant Oh how I wish my husband liked Reubens!!  I would make this in a heartbeat.  I love Reubens.  I might just have to make it for myself though it looks so good!
