Anyone who loves reuben sandwiches will love this casserole!

1 3/4 cup rinsed and well drained sourkraut

1/2 pound thinly sliced deli corned beef, julienned

2 cups shredded swiss cheese

1/4 cup thousand island dressing

1 tomato thinly sliced

6 T butter divided.

1 cup coarsely crushed seasoned rye crackers (I used rye triscuits)

In a 1.5 qt casserole dish, layer half the sourkraut, corned beef and cheese. Repeat layers. Drop salad dressing by spoonfuls over cheese. Arrange tomato slices over the top. Dot with 2 T butter. Melt remaining butter, stir in cracker pieces and sprinkle over top of casserole. Bake uncovered at 400 degrees for 30-35 minutes.
