Keep it simple you all. I have a newer model Vitamix with a frozen choice button. I seem to get too much liquid when I try.
In my freezer I now have frozen strawberries. I have 2% milk. I have no idea what flavor I want, just that I want to keep it simple and ice cream like not smoothe texture.

I just use about 2/3 cup of heavy cream and about 11 good sized frozen strawberries, a little sprinkle of strawberry koolaid powder, a little artificial sweetener optional to taste.
very good strawberry ice cream (:

If anyone wants a non-dairy icecream, I have a recipe for chocolate banana.
Put in your vitamix in this order:
4 oz. almond milk
2 tsp. level tsp. of baking cocoa powder (unsweetened)
1 tsp. Truvia
vanilla (I don't measure, I just put some in)
7 oz. frozen banana chunks
I blend and use the tamper until it is partially blended. I shut it off, take the lid off and tamp it down in the corners, run, stop, tamp, etc. til it is creamy. That's it. Be sure you stop the vitamix before tamping without the lid! LOL
If you don't like it to melt fast, put your bowls in the freezer and use them for your ice cream. This makes a pretty big bowl, which is perfect for me!

I have the 13 in 1 Vitamix, it doesn't have a frozen button.
I put in about 2 pints of frozen strawberries and about a half can of sweetened condensed milk. It's not really ice cream but the grandkids love it. (I do too!)

I guess I put in too much liquid and got a smoothie. Thanks I will try again using these recipes. I have the strawberries frozen and I will use them.

to start with add just a minimal amount of liquid, just enough to barely cover the blades.
You can always add more.
And don't be afraid of the machine, it will sound like it's grinding rocks, but it's OK!

@bonnielu For future reference check out the Vitamix website. They have a lot of great recipes for ice creams and many other foods. Enjoy!

This sounds really good @software. I've always used frozen strawberries with half and half or milk and some sugar, but I'm anxious to try your idea of using sweetened condensed milk. I'll bet it would be delicious with frozen peaches too!

You have to use the tamper if you want the ice cream to actually be scoopable thick. I just use frozen fruit, enough liquid just so that it covers the blades ( sometimes I use plain yogurt) but not all the frozen fruit and then a little simple syrup for sweetness and to bring out the flavor of the fruit. No presets, I use the variable speed dial and the tamper until it's done. I usually do strawberry. You can freeze milk instead of fruit. I never ever use ice it just dilutes the flavor.
