Refreezing Pork Chops?

I made fideo con carne de puerco (pork w/vermicelli) last night and the pork chops went a long way.  I thawed another package that I did not have to use after all.  Can I refreeze it?  I've never done this before. I have another dish planned for tonight.  

 

I would go ahead and cook them, but I plan to bread them and they get a little tough and dried out if I reheat them later.

 

Advice, please.

If you re freeze it they will loose moisture and be like leather, probbaly best to cook them and then freeze them

Yes, I think you're right in cooking/freezing them.  How would I rehydrate them without making them soggy since I'm going to bread them?

I freeze leftover pork quite often, but do so knowing the frozen product will have to be used in stir fry, soup or stew since it has already been cooked.  It sounds like a waste to bread a pork chop, cook it, then freeze it, and still expect to have a flavorful meat product once thawed.   Before I would do that, I would just stick the uncooked package back in the freezer and plan to use it very soon.
