Red or Green Enchilada sauce?

I plan on making ground beef enchiladas tomorrow, and have both the red and green sauce. Is one considered better with beef, or does it matter? Thanks for your advice.

Do not care for the green sauce and use red with all of the different insides of enchilladas. In fact this evening ordered out from one of the good restaurants around here and had enchillada rojas. Love.

I always go for the green as I love the taste of green chile.  You could do "Christmas ", half red, half green.

 

Apparently those who don't like green with beef, never had a green chile cheeseburger.

        Love both!!  I grew up in the land of enchiladas and both were popular, but at home, we mostly ate red!! 

       But, one thing that I rarely see in the US ...growing up, we always had sour cream with any enchiladas, any tamales or mole.  I always have to order it as a side when I eat out!!

Red sauce with cheese enchiladas and green sauce with cheese / shredded chicken . Both are delicious .Top with sour crean , onions and black olives , Mexican rice and frijoles de olla . My Mom used to cook potaoes and carrots as a side .  Yum - Yum !!

On beef or cheese and onion I like brown.  Yes, brown.  It's what we call 'chili gravy' and it is Tex Mex.  It's what I grew up on and anything else, red or green, is a big no for me.   I do like green on chicken and cheese enchiladas.   I make my own.

My absolute preference is chili con carne but if the choice is green or red I choose green.  Especially for chicken enchiladas.  Chimichanga beef or chicken are sooooo much better than an enchilada, at least here in Texas.
