I made these for Thanksgiving..served them in a field green salad with spicy & sweet pecans (from Trader Joe's) and crumbled Gorgonzola cheese. Yesterday we had some cold with a dollop of whipped cream on top.
The recipe is easy and can be changed to suit your tastes.
One bottle red wine (I used Shiraz)
6 firm yet ripe pears (peeled, split in half and the seeds cored out)...keep the stem, if possible.
2 Tablespoons Penzey's Mulling Spices (includes cracked cassia, cloves, allspice, cardamom seed and mace).
1-2 teaspoons peppercorns (or cracked pepper) and 1 teaspoon freshly grated nutmeg
1/2 cup sugar (I used organic cane sugar)
Peel from one orange or lemon - peeled in large strips - no white pith
Place wine, spices, citrus peel and sugar in a non-reactive pot. Bring to a boil. Add pears and reduce to a simmer. Simmer for 10 minutes, turning pears. Cover pot, remove from heat and let steep for 45 minutes (check to make sure a knife can pierce a pear easily). If still hard, simmer on stove.
Remove pears from liquid. Strain solids from liquid with a sieve or a coffee filter and boil liquid until reduced in half and syrupy. Place pears back in syrup and refrigerate overnight.

I love pears and Gorgonzola cheese together, this recipe is for me. Thanks for posting it.
