Recipes from Previous Posters

 

I have some recipes from previous posters that I thought some of you who were not on the boards in the early days might enjoy.  I will start with the CANNOLI CAKE submitted by Doxiedog and add a few more as I go through them later.

 

If anyone has any to add to this thread, it would be great.

 
And a special thanks to all of you who have been so generous in typing and sharing your recipes.

 

CANNOLI CAKE by Doxiedog

3 cups ricotta cheese

3/4 cup sugar

1 tsp vanilla

4 eggs

1 yellow cake mix with pudding in the mix

(plus ingredients to make the cake)

 

Mix cake as directed and pour into 9 x 13 pan.

Beat other 4 ingredients.  Spoon over batter.

Bake at 350 degrees for one hour.

Dust cooled cake with powdered sugar.

HONEY ORANGE CHICKEN FOR THE CROCKPOT

((Elmerita Fudd)

 

8 frozen chicken thighs

1/2 cup honey

1 cup orange juice

2 cups chicken broth (homemade, carton or can) *

1/2 tsp salt

1 T dry mustard

1 tsp fresh ginger root, minced (1 to 2)

1 tsp fresh garlic, minced

2 tsp soy sauce

1 10-oz frozen broccoli florets, thawed (optional)

2 T cornstarch --

        mixed with 1/4 cup water to form a cornstarch flurry

Cooked rice

2 T orange marmalade --

        with the rind and/or add orange zest

 

*one can works well if you don't have homemade

 

Put frozen chicken in crockpot right out of freezer.


Whisk all other ingredients together - except rice, broccoli if using, cornstarch and water - and pour over the chicken.  

Turn the crockpot on low and cook 4-5 hours.  If desired, top with one 10-oz package broccoli flowerets one hour before chicken is finished.

 

Before  serving, remove the chicken and broccoli and stir in cornstarch mixture.  Turn crockpot on high until broth bubbles and thickens.  

Turn crockpot off.  Serve over rice or pasta.

 

Elmerita's Notes:

To this recipe, I have added the orange marmalade and orange zest for a bit more orange flavor.  Also, IF I have a can of pineapple chunks open, I add with some of the juice.  Recipe easy to adapt to your taste.  Add snow peas, water chestnuts, even cashews.

It's nice to see recipes I might have missed and it's not important to me what/who are their sources. I'm easy going about recipe posts. If someone 'needs' the source, they can google it 😁

Enchilada Sauce

 

I have this printed out from 2015.  Simple and delicious.  Not sure who originally posted it. 

 

1 T olive oil
4 garlic cloves, minced
1 can Swanson less sodium chicken broth (14.5 oz)
1 can tomato sauce (15 oz)
1-2 T chopped chipotle chili in adobo sauce (to taste)
1 t chili powder
1 t ground cumin
1/2 t Kosher salt
1/8 t freshly ground black pepper

Heat saucepan over med heat. Add oil and garlic stirring about 1 minute. Add rest of ingredients and bring to a boil. Lower heat and simmer 7-10 minutes

 

We don't like spicy things so I omit the Chipolte and it's still good.

CHICKEN YUMMY (by BFL ??? Sorry)

1/2 lb fettuccini 

3 T butter or margarine

1 clove garlic, minced

1 medium onion, chopped

2 T flour

2 cups chicken broth or stock, hot

1/2 cup milk, or half and half, or cream

2 T dry vermouth or sherry, optional

1/2 lb fresh mushrooms, sliced

1 tsp lemon juice

1/2 tsp salt

1/4 tsp pepper

2 cups chicken or turkey, cooked, shredded or diced

1 cup Parmesan cheese, grated

 

On stovetop, heat water to boiling.  Cook fettuccini til al dente.

 

Meanwhile, in a 2-quart casserole, cook butter, garlic and onion until tender.

 

Stir in flour until dissolved and smooth.

 

Pour in hot broth a little at a time, whisking or stirring to keep sauce smooth.

 

Pour in milk or cream -- vermouth or sherry if using.

 

Stir in the mushrooms, lemon juice, salt, pepper, chicken or turkey, and drained fettuccine. 

 

Stir in 1/2 cup parmesan.  Sprinkle remaining cheese on top.

 

Bake 25 minutes until heated through.   [I assume 350 degrees.]

MELT IN YOUR MOUTH COOKIES (Kittymom)

1 cup unsifted flour

1/2 cup cornstarch

1/2 cup powdered sugar

3/4 cup margarine

1 tsp vanilla

 

Sift together flour, cornstarch and sugar.

 

In large bowl with mixer at medium speed, beat margarine until smooth.

 

Add flour mixture and vanilla.  Beat until well blended.  Refrigerate one hour.

 

Shape into 1" balls.  Place about 1-1/2 inches apart on baking sheet.  Then slightly flatten.

 

Bake 375 degrees for 10-12 minutes.  

Cool and frost with mixture of cream cheese and powdered sugar.  Makes 2-1/2 dozen.

 

[Some posters said these were good without the frosting.]

What a great thread!  I will be reading for sure.  I do not think I have any of the recipes from past years, but I will mention this site as it has many, many recipes and I enjoy searching it.  I may have mentioned it before, so forgive me if I am repeating myself.  

It is recipelinkdot com.   They have older vintage recipes and newer ones too.
