I promised to post some of the recipes I usually use for my army (9 people - family). They are general and I did not stick to any theme. They are as follows:
Molasses Cookies
1 1/2 cups melted shortening (Crisco)
2 cups granulated sugar
1/2 cup molasses (Brer Rabbit)
2 eggs
4 tsp baking soda
4 cups flour
1 tsp cloves (I usually use 1/4 tsp we're not too big on this spice)
1 tsp ginger
1 tsp salt
2 tsps cinnamon
Directions:
Cream together sugar, molasses & egg. Alternate dry ingredients with melted shortening until well blended.
Roll dough into balls & dip in granulated sugar (1/2 cup additional in small bowl)
Bake at 350 for 8-10 minutes (I use a small cookie baller from Pampered Chef)
Best BBQ (Sloppy Joes)
1 lb hamburger (I use leanest)
1 c Ketchup
2 tbsp Worcestershire sauce
2 tbsp regular granulated sugar
1 tbsp white vinegar
1 small vadalia onion (chopped fine)
Cook hamburger and onion till done (no pink). Chopping to make burger small pieces (sloppy joe style). Place iburger & onion mixture in a bowl. Add all other ingredients and stir. You may use more ketchup as I do because I like mine BBQ smooth but not runny. You may add chopped green pepper to the burger/onion mixture when cooking but I have little grandchildren who do not like the green pepper so I don't use it. The original recipe is made without the green pepper. This recipe I got from a caterer in my area. I have never made any other recipe since making this one. My gang love it!
Michigan Rocks (Cookies I made with my Dad. It's a recipe from his mother.)
1 or 1 1/2 c walnuts
1/2 c butter
1/2 c wesson oil (or shortening - we used wesson oil)
3 c flour
2 c light brown sugar
3 eggs
1 tsp cinnamon
1/4 tsp cloves
1/2 tsp nutmeg
1 lb raisins (soaked in hot water - do not discard water)
1 lb dates (soaked in hot water - do not discard water)
1 tsp baking soda dissoloved in 1/4 c hot water from raisins & dates
Once raisins and dates are soaked so they separate, remove them from the water and set aside the hot water. Add the 1 tsp baking soda to 1/4 c of this water. Still do not discard remaining water.
Mix all ingredients together waiting for raisins & dates until last. The batter will be thick. Add the hot date & raisin water to the batter to get desired consistency. DO NOT USE ANY MILK.) Once desired consistency (regular cookie dough consistency) is obtained, drop by small scoop (Pampered Chef) onto cookie sheets. (Do not spray cookie sheets)
Bake at 350 for 12 minutes.
Ida's Wedding Cake (From my Aunt Ida)
1 box Yellow Cake Mix
Bake Cake accordign to pkg directions in a 13x9 pan. Let cool.
In a bowl combine: 1 c milk - Lemon Instant Pudding - 1 pkg 8 oz cream cheese.
Mix all ingredients & spread over top of cooled cake. (This is Pudding mixture)
Next Drain 1 20 oz can crushed pineapple. Spread over pudding mixture.
Next 1 large tub of whipped topping - spread over the crushed pineapple.
Sprinkle 1 can (if you use bag use approx 1-1 1/2 cups) flaked coconut over top.
Refrigerate until serving time. (Should be about 4 hours prior to serving so pudding sets.)
Bacon Hot Dog Appetizers (Thank you to my dear cousin Harrison!)
2 pkgs all beef hot dogs. Cut all hot dogs into 4 pieces
2 pkgs bacon slices. Cut into 3 sections
Place aluminum foil on deep and long jelly roll sheet pan.
Wrap bacon around hot dog & spear with a round toothpick to hold the bacon on. Roll gererously in Light Brown Sugar coating each appetizer. Place on the aluminum foil lined baking pan. Lay in single layer & bake 300 - 350 degrees until bacon is done and slightly crisp. Hot dogs should plump when they are cooked to well-done.
Place sliced pepperoni on a paper-towel lined plate and microwave 20 seconds to get the grease out of the pepperoni. Remove from oven.
Layer the hot dog appetizers in a crock pot (With the toothpicks still in them) and place pepperoni pieces in between each layer then add:
KC Master Piece Original BBQ Sauce (You may use the honey but we prefer the original)
Simmer on low in the crock pot for 30 to 45 minutes. Appetizers are now ready to serve.
