Recipe Winner in Taste of Home....Pita Sandwiches

I saw this recipe in a recent Taste of Home magazine (Aug/Sept).  It sounds very good and easy to make so thought I would post it.  If you have magazine, it is on page 68.  Contributor, from NY, won Second Place in "Wholesome in Minutes" Contest.

 

FRUITY CHICKEN SALAD PITAS

 

1 cup cubed rotisserie chicken

1/2 cup chopped apple

1/2 cup chopped celery

1/2 cup unsweetened crushed pineapple, well drained

1/4 cup dried cranberries

1/4 cup mayonnaise

1 teaspoon lemon juice

1/4 teaspoon onion powder

1/8 teaspoon salt

4 pita pocket halves

 

Combine first nine ingredients.  Fill pita halves with chicken mixture.

@walker  - sounds delish, thank you for posting! I would add some chopped walnuts and diced white cheddar cheese

Used to make an easy "rip-off" pita sandwich from a Detroit area restaurant called a "Middle Eastern". No real measurements, just faked it.

 

Browned ground beef, seasoned with your choice

Diced tomatoes

Diced cucumnbers (fairly fine)

Diced onions (just a bit)

Ranch dressing

 

Place in pita half, drizzle with ranch dressing

I love chicken salad, and just might try this, @walker. Thanks!

 

My absolute fave chicken salad uses Major Grey Chutney mixed with mayo and a dash of curry powder. Mix with chicken, apples, celery and nuts.

Sounds good. One of my favorite chicken salads is the one they serve at Arbys in the summer months. Chicken Pecan salad. I now make own Smiley Happy. I

 

Mix together

 chicken breasts, cooked, cubed
 mayonnaise
 celery, finely chopped
 pecans, chopped
 red delicious apple, chopped
 red seedless grapes, chopped

 

Spread on
 honey-wheat bread with lettuce

 

hmmmm now i wanna make this!Smiley Happy

Perfect for a hot day. Might change out the pineapple for grapes.

I love Taste of Home!

 

This sounds good except I would substitute dried cherries and add almonds or cashews.  

 

I also don't ever buy or eat R chicken.  We have a farm nearby where we buy our chicken and now I've been spoiled Smiley Happy
