 I do something similar and I do use the seasoned rice vinegar. I add green onion slices to mine. I cook the noodles slightly first. I'ved used chicken breast and I've also used chicken tenders (the battered kind, usely fried - I do up in air fryer). If you use the chicken tenders from a deli deptartment or make at home, I cut into strips. Best done when tenders have been chilled. Delish!
