ROBIN'S EASY SALSA

 

1 15 oz can Red Gold Petite Diced Tomatoes
1/2 of a Sweet Onion, rough dice
1 chopped Green Onions 
1 Jalapeno, rough dice (add some Ribs and seeds, for heat)
1/4 teaspoon Sugar
1/4 teaspoon Salt
1/4 teaspoon black pepper
1/4 teaspoon Ground Cumin
Bunch of Cilantro (more To Taste!)
1/2 fresh Lemon... Juiced

Siracha... squirt to taste

 

ADD AFTER PROCESSING SALSA...

1 fresh tomato, diced

1 green onion, finely sliced


Add all ingredients into a food processor (My Magic bullet is perfect for salsa making). Pulse processor to consistency that you like. Taste seasonings and adjust as needed.

 

After processing, add a fresh diced tomato and green onion to the salsa and pour into a 24 oz Mason/Kerr canning jar.

 

Refrigerate salsa for at least an hour and better overnight.

 

Note... I make salsa every weekend and a 24 oz mason/kerr jar is perfect fit for the salsa.

Great on Breakfast Tacos (scrambled eggs, bacon, cheese, fresh diced tomatoes, diced/sliced avocados and homemade salsa on a tortilla slightly crisped in butter).

 

I also use the salsa in making soups, chili and taco meat.

Sounds good! I like salsa on my scrambled eggs in the morning.

I never buy it, making salsa on a Sunday morning is one of my little rituals...lol  I make just enough for the week.  I have made it for so long that I never measure, so please taste and adjust spices to your liking.  My family always request it if we are getting together.  I hope you like it!

Also I have found that "Red Gold Petite Dice" is my favorite.  Through the years I have tried many brands of canned tomatoes and it really does make a difference on the brand you use.

Could you just use Rotel foro the tomatoes?

Hi Sooner... I'm sure Rotel would be great.  I just prefer to add my own spices and heat.  Go for it!
