ROASTED MELANGE OF FALL VEGETABLES

I took a cooking class last night at our local co-op.  The theme was make ahead sides for Thanksgiving.  I wanted to share this one.  A nice change from green bean casserole!

 

1 bunch baby carrots with green tops, halved
1 bunch red radishes, halved
8 small turnips, halved
1 pound Brussels Sprouts, halved
1/4 cup olive oil
1 T fresh thyme, chopped
1 T fresh rosemary, chopped
1 T red wine or sherry vinegar
Salt and pepper to taste

 

Pre-heat oven to 400.

 

Toss all ingredients on a sheet try and roast for about 20 minutes or until vegetable are just tender.  The vegetables can be roasted ahead and reheated while the turkey is resting.

Sounds terrific!  I love radishes, but have never had them cooked.  I'm going to give it a try.  I am always the one that is supposed to bring the green bean casserole because my sons love it.  Might bring this along too.

@DiAnne  I am doing a mix of veggies to roast too and these sound like a nice new choice to use. Colorful too this time of year. Thanks for the recipe.

 

@mac116  Definitely do this and that other one if you must!!!  Kidding - you know what I mean!

sounds delicious---I do this all the time however, the radishes intrigue me--remember not to crowd the veggies or they will steam and not roast--found that out the hard way. 

Dianne--did you go to a PCC for the class--I know you are a WA state girl!!

I did go to PCC.  I usually take a couple classes there every year.

This sounds amazing, all my favorite veges.  LOVE radishes but never have had them cooked. And to blend them with carrots, Brussel Sprouts and turnips......thank you so much for this recipe.  I am going to try this in my air fryer.....
