ROASTED CARROTS WITH DILL--4 SERVINGS

This can roast in oven while rest of dinner is prepared......

 

In roasting pan, toss 8-10 large carrots with enough olive oil to coat.

 

Top with 1 tablespoon unsalted butter cut into small pieces (optional), kosher salt and fresh ground black pepper.

 

Roast in a 425-degree oven to desired tenderness, then turn on oven broiler and cook carrots until lightly browned.

 

Sprinkle 1 tablespoon fresh dill over carrots.

@novamc1 @I like to add chopped red onion to the carrots as they roast.
