You can use fresh orange juice but be aware you will have to use at least 3 times as much to get as much orange flavor.

What's with the obsession with Beets?  Seems as though you can't go to a restaurant without having them on the menu.  Yuck! Yuck! Yuck!

I'm also wary of cooking things in foil as I have read that is a good way to get an unwanted dose of aluminum.

I agree!  I would just put them on (a good) parchment paper and roast.  Same for garlic.  No foil for me, thank you!

 

I love beet hummus.  Oh my gosh!!!  So good.
