I pulled this out of a recent magazine (Cuisine at Home) and it is really good.

 

1/4 cup rice vinegar

3 T olive oil

1 T minced shallots

1 t each honey and Dijon mustard

s&p to taste

 

4 strips thick sliced bacon, diced

1 cups halved red seedless grapes
1 pkg arugula (5 oz)

1 avocado, chopped

1/4 cup chopped roasted and salted pistachios

 

Whisk together vinegar, oil, shallots, honey, Dijon, salt and pepper.

 

Cook bacon until crisp,  Drain on paper towel.

 

Combine grapes and arugula in large bowl,  Toss with vinaigrette to coat.  Garnish salad with avocado, pistachios and bacon.

 

I did not have pistachios at hand so I used silvered almonds.  I think pine nuts would be good also.

This sounds soooooo good! Easiest way to slice grapes? Put them between the bottoms of two plates and slice through them all at once....
