I love raw fresh corn in salads. Made this one yesterday - super easy and delicious.
3 ears sweet corn
3 green onions, chopped
Large handful of basil, finely chopped
Juice of one large lime
1 T olive oil
1/2 cup finely crumbled feta cheese
Salt and pepper to taste
Cut the kernels off the corn and mix with green onions, basil, lime juice and olive oil.
Add the feta and stir gently. Season with salt and pepper.

I, too, love to cut the kernels off the cob and throw into salads. I do this all summer long, just adding the corn to almost any salad I make. This salad sounds good! Thanks for posting; I look forward to trying it.

That sounds really good! In the summer when the corn is so, so sweet, I love to eat it raw in salads. Corn is one veggie that I think is even good when canned or frozen but there is nothing to compare with eating it fresh off the cob. I sprinkle the kernels over all of my chopped salads during the summer. Thanks for sharing your recipe.

This sounds so good. I have never made this. Am I understanding that you use raw corn off the cob, no blanching involved?

I think it would be really bland. In my opinion it works better as a replacement for a salad.

Yes. I recently had a salad that included grilled artichoke hearts, arugula and micro greens, corn, and shaved parmesan cheese with a light lemon/olive oil dtssing. Delicious

This time she made a defrosted corn salad with onion, spices
and vegan mayo, which you could replace w/ anything fat.

Another delicious way to eat raw corn: I cut the kernels off 1 cob, chop a little red onion, chop 1 whole large Jersey beefsteak tomato, and add some crumbled feta cheese (I don't measure the cheese, but I know I use a lot because that's how I like it). Throw in some croutons and drizzle with balsamic salad dressing. If the mood strikes me, I'll grind some Italian spices over the salad.
