I love raw corn in salads.  This one has a Mexican flair.

 

6 ears of corn, kernels cut off

1/4 cup roughly chopped fresh cilantro

2 T mayonnaise

3 T crumbled cotija cheese

1/2 t ancho chili powder

juice of 1 large lime

Kosher salt.

 

Combine all in bowl.  Serve immediately or refrigerate for one day.

 

I mixed the mayo and chili powder together before combining.  Also the cotija cheese I had did not want to crumble so I grated it.

Sounds good, thanks DiAnne.  I love to stand out in the field and eat fresh corn right off the cob.  I don't know how unusual it is, but we used to have a little white poodle who would stand up on her hind feet and beg for raw corn when we were cutting it off the cob to freeze.  She loved wild blackberries, too.

I don't think it's that unusual HoneyBit.  Chloe would go nuts when I would cut the raw kernals off the cob and would take no prisoners when peas made an appearance . . . Smiley Happy
