Quick & Easy Mulligatawny soup, Pioneer Woman's recipe

I know this sounds weird, it took my sister coming to visit and her cooking it for me to try it!!

I add extra curry and cream and more chicken and apple...and I usually make 1 1/2 the sauce.. and it freeze's well..

This is the 4th time iv made it..I also added some potato..! also make this and serve it with rice and Greek bread..

  • 1 whole Boneless Skinless Chicken Breast, Cut Into Bite-Sized Pieces
  • Salt And Black Pepper To Taste
  • 4 Tablespoons Butter
  • 1 whole Medium Onion
  • 3 cloves Garlic, Minced Finely
  • 1/4 cup All-purpose Flour
  • 1 Tablespoon Curry Powder
  • 32 ounces, fluid Chicken Broth
  • 2 cups Half-and-half
  • 1 whole Granny Smith Apple, Peeled And Diced ( I use Johnagold apples
  • 1 Tablespoon Sugar (white Or Brown) More Or Less To Taste
  • 2 teaspoons Salt, More To Taste
  • Freshly Ground Black Pepper
  • Cayenne Pepper (optional, For Spice)

Season diced chicken with salt and pepper. Heat 2 tablespoons butter over medium-high heat. Add chicken and cook, stirring occasionally, until golden. Remove chicken to a plate. Set aside.

In the same pot, add butter and reduce heat to medium. Add diced onion and garlic and stir to cook. Onions should be starting to brown.

Sprinkle flour over onions. Stir to combine, then stir in curry powder. Cook mixture over medium heat for one minute, stirring constantly.

Pour in chicken broth. Stir to combine, then cook for five minutes. Add half and half, salt, pepper, and sugar, then cook for another five minutes.

Add chicken and diced apple and cook for another 5 to 10 minutes. Turn off and allow to stand 5 or 10 minutes before serving. Taste for seasonings before serving.

This does not sound weird at all to me! I love curry and I have had this soup before. This sounds like a simpler recipe. I will have to give it a try this fall! Thanks for posting.

Thanks so much for posting! I LOVE soup all year long and have never even seen a recipe similar to this!! It does sound weird to me! How do you even say the name of this soup? LOL

Apple?!! The ingredients are so interesting to me I can't wait to try it!

Do you use the white or brown sugar?

Dianne, I hope you get to try it, I added a little more flour to thicken or if you let sit in the fridge it will thicken You can go to PW web sight to view how she made it..

Respect I use the Johnagold apples, I like the apples to be not crisper..I hope you get a chance to make it, I just love it!! I use brown sugar and i add a just a little more then it calls!..

Thanks Britt...I will use brown sugar when I try it since that is what you like.

This is definitely on the menu for next week! I just love trying new and different things!

This weekend I am committed to Italian for my son's birthday.

That is the ONLY thing I have found to be a plus since just getting an empty nest (sniff, sniff). My kids were BORING eaters and now I get to experiment and make all the GOOD stuff for just us again.

If you like those flavors this is a similar soup but without the half and half.

COUNTRY CAPTAIN SOUP

A zesty soup - nice for a change of pace.

1 T olive oil
1 large onion coarsely chopped
1/2 c chopped red bell pepper
4 clove of garlic chopped
6 skinless boneless chicken thighs, cut into 1 inch pieces
1 T curry powder (I prefer madras type)
1 t grated fresh ginger root
1/4 t dried crushed red pepper
4 cups chicken broth
2 cups canned diced tomatoes with juices
1 large Granny Smith apple, peeled and coarsely chopped.
1/4 cup orzo
2 T dried currants
Chopped fresh cilantro
Plain yogurt

Heat oil in large Dutch oven over medium high heat. Add onion, bell pepper and garlic. Saute until soft. Add chicken, curry, ginger, and crush red pepper. Stir two minutes. Add broth, tomatoes and apple and bring to a boil. Reduce heat and simmer 20 minutes.

Stir orzo and currants into soup. Simmer until orzo is just cooked. Season with salt and pepper. Ladle soup into bowls. Garnish with a dollop of yogurt and cilantro.

Well, I still can't pronounce this soup...but we really liked it!!

It was so dang cold here yesterday, soup was in order even though it is June! LOL

It truly was delicious and very different than my usual soups.

The only thing I didn't have was potatoes as you suggested. I think that is a great suggestion! A little more 'meat' to the soup.

I so agree w/ you about adding extra chix, curry & apples. I couldn't find Johnagold but I loved the Granny Smith. So crisp and fresh and unexpected (to me anyways) in a soup.

Yep, more chix, more apples and more curry was perfect.

Thank you so much! I had a lot of fun making this. DH kept coming over when I was cutting the apples and stealing bites. I told him I needed them for the soup and he gave me a look of shock! It was our favorite part of the soup! Those apples (and the curry too).

I did serve over brown rice and had the crusty bread too. Delicious dinner thanks to you!!
