Texas Style Peach Cobbler

Note: If using canned or frozen peaches, skip the first 3 lines of the cooking instructions.

Ingredients

  • 2 lbs fresh, canned, or frozen peaches (approx. 7 medium peaches)
  • 1/2 cup butter
  • 1 cup flour
  • 2 cup sugar
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 2/3 cup milk
  • 1 egg
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  •

Preparation

  1. For fresh peaches, ripe peaches are easier to peel. When you press your thumb against the peach you should be able to feel the peach’s flesh move beneath the skin. If they are too hard you will have to peel them with a pairing knife (or wait for them to ripen).
  2. To peel fresh, ripe peaches bring a pot of water to boil. Submerge peaches completely in boiling water for approximately one minute (less if they are really soft) then immediately dunk them in a bowl full of ice water.
  3. Remove peaches and cut a small X at the bottom of each and use these points as starting points for pulling the peels off.
  4. Peel and slice the peaches, place in a medium bowl. If using canned peaches drain them and place them in the bowl. For frozen peaches, thaw and place in the bowl.
  5. Preheat oven to 350°F.
  6. Melt butter in a 13Ă—9 inch casserole.
  7. In a mixing bowl, stir together flour, 1 cup of sugar, baking powder, and salt.
  8. Add milk and egg and stir to combine.
  9. Pour batter over melted butter in the casserole dish, do not stir.
  10. Add 1 cup of sugar to peaches along with cinnamon and nutmeg if using. Stir to combine.
  11. Spoon peaches and sugar gently over batter, do not stir.
  12. Bake casserole for 30-40 minutes or until batter is fully baked and golden.
  13. Serve hot with vanilla ice cream if desired. Myself, I like it just the way it is!

I think this is the recipe from The Kitchen...Katie Lee's grandparents recipe.  I think!  In order to fit it on one pg. I apparently left off the source!

Peach Cobbler

8 to 10 servings

Ingredients

4 cups sliced peeled fresh peaches (4 to 5 peaches)
1 cup all-purpose flour
1 cup sugar
1 teaspoon baking powder
1 teaspoon kosher salt
1/2 cup milk
4 tablespoons (1/2 stick) unsalted butter, melted
1 tablespoon cornstarch
1/2 cup boiling water
Serving suggestions: vanilla ice cream or whipped cream, optional

Directions

Preheat the oven to 325 degrees F.

Place the peaches in a 9-by-9-inch baking pan. In a medium bowl, mix together the flour, 3/4 cup of the sugar, the baking powder and 1/2 teaspoon of the salt. Add the milk and melted butter and mix well. Pour the batter evenly over the peaches.

In a small bowl, mix together the remaining 1/4 cup sugar, the cornstarch and remaining 1/2 teaspoon salt. Sprinkle the mixture over the batter. Evenly pour the boiling water all over.

Bake until golden brown and bubbling, 50 minutes. Serve in individual dessert dishes with vanilla ice cream or whipped cream, if desired.

Good morning everyone and Happy Peach Cobbler day!

I made a peach cobbler once for my very first boyfriend here in DC and it didn't go well.  I should have ended the relationship over that.  LOL

I have never attempted another peach cobbler (or any cobbler) since.

I do have a vintage copy of Farm Journal's Complete Pie Cookbook from 1965, so if I were to attempt a cobbler again, I would use this one:

FRESH PEACH COBBLER

1 1/2 T cornstarch
1/4 to 1/3 c brown sugar, firmly packed
1/2 c water
4 c sweetened sliced peeled peaches
1 T butter
1 T lemon juice

Batter Topping

1 T sugar
Spiced Honeyed Cream

Mix cornstarch, brown sugar and water. Add peaches and cook until mixture is thickened, about 15minutes. Add butter and lemon juice. Pour into a 8" round baking dish. Drop spoonfuls of Batter Topping over hot peach mixture. Sprinkle with white sugar. Bake in 400Âş oven for 40-50 minutes. Serve warm, in bowls, with Spiced honeyed Cream. Makes 6 servings.

Batter Topping: Combine 1/2 c sifted flour, 1/2 c sugar, 1/2 tsp baking powder, 1/4 tsp salt, 2 T soft butter and 1 egg, slightly beaten. Beat with spoon until batter is smooth. Drop by spoonfuls over hot peach mixture spreading evenly. It spreads over peaches during baking. Bake as directed.

Spiced Honeyed Cream: Beat 1 c heavy cream until thick. Add 2 T honey and 1/2 tsp ground cinnamon. Beat to mix. Makes 1 2/3 cups.

To use canned fruit, use 1 can (1 lb, 13 oz or 2 1/2 Cups), omit water and use only 1/2 cup of sugar.
