Morning, ladies!
Hope everyone is well and safe from storms and troubles!!
I just posted the spiralized cuke/zucc salad. Lola (a wonderful poster from RS) inspired me to get that little gizmo (I got the Veggetti from BBB (w/ coup. of course). It is small, easy to use and easy to store. I have been sprializing away and loved pretty much all the recipes I have tried.
As I mentioned, DH didn't care much for the above (not an Asian PnBtr flavor kinda guy, I guess!). I liked it and finished the leftovers last night after visiting Mom, but he really loved the Shrimp Sprial Zucc that Lola posted recently. I'm Italian, so sprializing veggies into noodles doesn't fool me in the least, but I like it as an alternative to carbs. I like crunch so these recipes have been fun!
This website has fantastic recipes for the spiralizer:

Respect, thank you so much for the recipe. Copied and filed, all I need is to get some cucumbers and zucchini. And thanks for the link, they do have some very interesting ideas!

Make sure to pat the cucumber noodles dry thoroughly, using paper towels to remove excess moisture!
- For the sauce:
- 2 tablespoons sesame oil
- 3.5 tablespoons soy sauce
- 2 tablespoons rice vinegar
- ÂĽ cup tahini or creamy peanut butter *I used Pbtr, but felt 1/4 cup was a bit much for us
- 1 tablespoon honey
- 1 tablespoon finely grated ginger
- 2 teaspoons minced garlic
- 2 teaspoons sriracha
- For the rest:
- 3 teaspoons white sesame seeds
- 4-5 large English cucumbers, noodles trimmed* I didn't have enuf cuke so I spiralized a couple zucchini...and blanched them a bit so they weren't totally raw, just crunchy
- 4 scallions, diced, to garnish
Instructions
- In a medium bowl, whisk together the sesame oil, the soy sauce, rice vinegar, tahini (or peanut butter), honey, ginger, garlic and sriracha.
- In a large bowl, toss the cucumber noodles with the sesame sauce. Transfer to a serving bowl and garnish with sesame seeds and scallions.
Notes
This makes about 1 cup of "sauce."
Dear Respect,
Thanks so much for sharing this recipe. It looks delish! I can't wait to try it.
That sauce sounds like it might be nice over meat, regular noodles, in salads--whatever.
Num, Num!

Hello Kitchenettes,
I hope I can get thru this before I get kicked off the internet. Charter was at my house over 3 1/2 hours this afternoon/evening "fixing" our internet and cable. An hour after they left, I no longer had internet and have been kicked off 3 or 4 additional times...sigh. DH comes home tomorrow evening and hope he has better luck getting the problems taken care of.
I wanted to come here this evening and ask for prayers. A young man from a local university was trying to sell his car on Craig's List; he saw his girlfriend Monday then headed into MO to meet this person who was interested in his car. They found his car yesterday afternoon and a few hours later found his body about 400 yards away in a wooded area and shallow grave. I didn't know this young man but everyone that has been interviewed about him had nothing but good things to say about him; my heart is so heavy. He came from a small town that another poster that is here from time to time, bbqjudge, is from. He had such a nice friendly face and worked in a convenience store near his hometown and customers were saying how people stopped in just to talk with him. He was only 19. Then this afternoon, a 5 year old boy, the son of a policeman from a small town near St. Louis, was mauled by the family dog, a bull mastiff, and had to be airlifted to Childrens hospital at Barnes with severe injuries. I just can't take anymore tonight. I am going to pray and ask that each of you when you read these sad stories to please say a prayer of healing for both families and for the little boy.
And if any of you are in the line of these terrible storms that are happening in the Midwest, please check in when you can and let us know that you are safe.
Thank you.

Oh Mustang...that is so tragic! That darn Craig's list! I have read so many horrible stories of innocents lost. Only 19 yrs. old. My heart just breaks for his family and his girlfriend.
And that poor child...I will certainly start praying for them as well.
I saw on the news this morning about all the storms swirling around.
Please stay safe, dear friends! To all those in the path, May God protect you and keep you safe from harm!!!

Good morning Kitchenettes,
I just wanted to come back here to report the police have a suspect in the murder case. The suspect is only 24 himself. I can't imagine what a nightmare this Mother's Day will be for the mother's of these two young men. Public support for the victim has been strong and peaceful and many stories of this young man's kindness and his friendly nature has been all over the news. His entire community is giving many great stories about him and you can tell he will truly be missed.
The little boy that was mauled by the dog was reported to be clinging to life this morning. Children's Hospital, which is part of Barnes Hospital in St. Louis, is nationally recognized; he is in the best hands this area has to offer. It is where I would head with my children and now my grandson if they needed more than standard care. The staff there is committed and tend to work their entire careers there. I was happy when I got up at 5 a.m. after an extremely restless night of sleep, to hear first thing that he is still alive.
Thank you for your sweet comments, Respect. How is your dear Mother doing? And how are you doing? Hope things are starting to settle a little although I suspect it will still take more time. My own mother resisted for awhile but she soon adapted to the routine and her attitude improved and her overall health did as well because of the wonderful care she received. I am praying the same for yours.
I am going to have to check out that link you provided above for your spiralizer. I am not a real pasta fan but do think I would enjoy making "noodles" out of vegetables. This seems to be a gadget that is catching on quickly and I am seeing many recipes popping up everywhere. Thanks for sharing the link.
Hope everyone else is safe and having a wonderful spring day. It is sunny and very warm here; will be in the upper 80's with very high humidity today in anticipation of the storms hitting Kansas and Oklahoma moving closer our way. We are to get possible showers/storms this afternoon and will have waves of showers over the weekend with the greatest chance of violent storms Sunday night into Monday. Normally this time of year, we are about 15 degrees cooler and lower humidity. It kind of feels like mid to late June already weather wise.
Peace to all, and a blessed day.

Dear Mustang65lady,
My heart breaks for these two tragedies and the families involved in them. Rest assured all concerned will be in my prayers. I also pray that somehow the Lord will bring some good out of these heartbreaks.
Mustang, you have such a kind and tender heart--like that of our Lord. I know these things are hard on you as well because you truly care so deeply about people. Don't ever change; that is a wonderful quality to have. I pray that God will strengthen you and give you His peace and comfort. I am so very thankful that there are dear souls like you in the world. God bless you and give you joy today!
Dear RespectLife,
I continue to keep you and your mom in my prayers. I am still thanking God that a place opened up that you feel is a good fit for your mom. Hopefully, she will begin to adapt to her new surroundings.
I am also praying that you are able to get some renewal/downtime for yourself. These situations can be draining, I know. A brief walk in nature, a cup of good coffee out somewhere, or whatever can be a little "treat" for you. Please feel our prayer support and God's arms around you reassuring you of His love and continued direction.
I am definitely look into that spiralizer doodad. Thanks for telling us about it. I am trying to reduce carbs (I just feel better and have more energy when I limit them.), so making vegetable "noodles" sounds like a very good thing. I wonder if I could make a tuna casserole with vegetable "noodles" instead of pasta? I may have to try that out once I get my spiralizer thingie.
Dear Kitchenettes,
You all are in my thoughts and prayers. Like Mustang, I pray that you all will be safe and protected from any bad weather. Each and every one of you is a special gift. I am so privileged to know you.
Your friend,
Writer with Flair

Thank you for your prayers and concern about Mom. It is indeed so sad to watch your loved one, so previously filled with life and smiles, slumping in a wheelchair without the usual smile. She is not really speaking much...odd for a lady who would chatter away with a stranger. Even as the Alz. descended on her...she still loved to be with people and friends. While her conversations were inaccurate or in the past...they were still full discussions. I am missing those. Even though she didn't break any bones in the fall...she is barely walking anymore. Prior...she just 'carried' a cane and toddled around. Now, she isn't even using a walker except in therapy. I understand they are concerned with her fragility and need her protected in the wheelchair...just heart breaking to see such a fast decline in everything. God is good...and in control...and I need to rest in His assurances!
Writer, if you do get some sort of veggie 'noodler', I hope you have as much fun with it as I am! As I said, I got the least expensive version...which requires my hand cranking the veg, but that is okay for me. I didn't invest much....
Which leads to your point about doing something nice for myself...hee, hee. I did a little 'retail therapy' last night and ordered the LeCrueset 5.25 pot. It had 6 ez pays and no shipping...I caved. I have wanted one for a long time. I have a huge dutch oven and love it! I needed something smaller so I stop cooking HUGE amounts of food! If the pot is big...I feel the need to fill it.
I may be back soon asking for prayers for myself...when my DH sees that arrive. He may just clobber me with it! I have NO where to store it...and actually needed it like the hole in my head he is going to give me...but hey, Mother's Day present to myself!
Has anyone seen Chili? I miss her here!

Just saw the weather report. It looks like the chance for severe storms is there through the weekend. I would appreciate your prayers.

I saw the reports this morning on the National News. We are certainly praying for the entire midwest!!
Dearest Writer, know we are all praying for you!
