Good Saturday morning everyone
I am doing some cooking this weekend. I stayed up last night to watch the opening ceremonies (probably the on part I'll watch other than the closing ceremonies. LOL)
I made these last night. They are not really cookies as there is flour of any kind in them, but they are quite good for my purposes. More like granola clusters vs cookies. I left out the palm sugar since I don't have any and I don't use sweetener in most things anymore. They are fine for me.

Wegmans ddin't have fresh oregano, so I left it out. For me, fresh and dried oregano are two different flavors and they don't interchange. Wegmans only had mint plants and they were not very full, so I barely got a 1/2 cup of mint out of it. I salted the roasts and added salt to the marinade. I notice most bloggers leave out salt and pepper so I have to remember to do that when I'm following a recipe from non-professionals.
I also use the Hefty 2 Gallon Ziplock bags for marinades. It takes up less room than a bowl and it's easier to manipulate the meat every time I go into the refrigerator, I flip the roasts around (Wegmans only has 2-3lb roasts, so I always have to buy 2).
My kitchen smells wonderful from just making the marinade.

Our weather is supposed to be beautiful again starting tomorrow, after the storms this afternoon pass, so I am getting my cooking done today so I can be out and about tomorrow.

I'm glad it's finally on in your area. I like watching it early in the morning when I'm getting dressed for work. I also watch Martha Bakes at that hour. They are low key and relaxing to listen to.
Martha had Madeline Zakarian on this week (along with the students from local culinary schools). She is the daughter of Geoffrey. They are apparently neighbors and I guess she comes by to play. LOL She was adorable. Martha said she wasn't scheduled to be on the show, but I guess she figured she could just sit her with the other students for the heck of it.
I want to go over to Martha's to play, too.
I think Martha does better without an audience like this. Like Emeril, she works better with a big studio crowd or by herself. These people sitting around the counter while she works is distracting and adds nothing for me.
I miss Emeril Live.

Good afternoon Ladies! Ended up being a beautiful day. It's still hot but not as bad as it has been. There is a nice breeze now too so its comfortable to sit outside.
I did some errands, banking & a little shopping. DD wanted to get some make up to practice with so she is having fun with her new "toys"!
