Tempura FAQ

 

Q. What temperature should my oil be for tempura?

 

A. The oil should be between 350F to 360F. When you add food to the oil, the temperature will drop, so only add a few pieces at a time so that the oil recovers quickly. Oil that is too cool will be absorbed more quickly into the food resulting in soggy tempura.

 

Q. What happens if my oil is too hot?

 

A. Oil that is too hot will cause the batter to burn. So, it's important to monitor the oil temperature.

 

Q. What oil should I use for tempura?

 

A.  Vegetable oils with a high smoking point such as corn, peanut, safflower, or the most popular for tempura is canola.

National Peach Melba Day (January 13th) | Days Of The Year

 

NATIONAL PEACH MELBA DAY

 

Another dessert brought to us by an internationally famous chef, National Peach Melba Day offers a refreshing celebration on January 13th each year. 

 

French chef Auguste Escoffier invented the elegant dessert back in 1892 or 1893, depending on the source. He created the dessert with peaches, vanilla ice cream, and raspberry sauce while employed at the Savoy Hotel, London. The dessert honored Australian soprano, Nellie Melba.

 

The chef was known for naming his creations after famous people. Three such recipes are celebrated on the calendar including National Melba Toast Day on March 23rd.

 

Nellie Melba was born Hellen Porter Mitchell. She took the stage name Melba in honor of her hometown of Melbourne. Her achievements as an opera singer took her on tour worldwide. Later, she earned the title of Dame Grand Cross of the British Empire in 1927.

 

Chef Escoffier originally called the dessert "Pecheau Cygne" or "Peach Swan" and presented it in a swan-shaped ice sculpture and topped with spun sugar.

peach melba recipe

 

Peach Melba

  •  
  • Cook Time: 10 minutes
  • Total Time: 10 minutes
  • Yield: 4 

Ingredients:

 
  • 1 cup sugar
  • 1 cup water
  • 1 vanilla bean, sliced open (or 1 teaspoon vanilla extract)
  • 4 large firm peaches
  • Sauce:
  • 3 cups fresh raspberries or 12 ounce bag frozen, thawed
  • 2 tablespoons powdered sugar
  • 1 tablespoon fresh lemon juice
  • 1 pint vanilla ice cream
 

Instructions:

 

  1. Combine sugar, water and vanilla bean in a pot over medium heat. Stir constantly until mixture boils. Cover and boil 5 minutes. Turn off heat. If using extract instead of vanilla bean pod, add extract now.
  2. Cut peaches in half and remove the pits. Bring syrup to a strong simmer and add peach halves. Poach 2-3 minutes until soft. Cool until you can handle them, then peel. Cool the syrup and store peached with syrup in refrigerator up to 24 hours.
  3. Combine raspberries and sugar in a blender until pureed. Press through a sieve. Refrigerate.
  4. Serve ice cream with peach halves and raspberry syrup.

Peach Day should be in September!  That's when they are ripe around here....many Peach Festivals!!

I think Just Bagels is a Big Deal right now.

 

I used to order them and found them way better (yes more costly) than anything I can buy in the grocery store.
