National Brandied Fruit Day

 

National Brandied Fruit Day

 

National Brandied Fruit Day is celebrated on October 20. Brandied fruit are made with sweet fruit (either fresh or dried) soaked and marinated in brandy and sugar. They are usually used as a topping on cakes, pies, or ice cream.

 

Brandied fruit (also known as brandy fruit) were quite popular in the 1970s, but have fallen out of fashion since then. Perhaps the National Brandied Fruit Day is an attempt to revive interest in this dish.

 

Brandied fruit can be made with different kinds of brandy such as cognac, applejack, schnapps, kirschwasser etc.

 

If you want to celebrate the National Brandied Fruit Day, you should start making brandied fruit in advance because it takes at least one week for the fruit to get properly soaked with brandy.

 

How to make brandied fruit?

 

In a large bowl, combine 1 cup dried apricots, 1 cup plump prunes, 1 cup dried figs, 1/2 cup raisins, 1/2 cup dried cherries.

 

Put 1/4 of the fruit in a lidded glass jar. Add 1/2 tsp raw sugar, 2 long strips clementine peel, 2 thin slices ginger, and 1 star anise pod.

 

Repeat 3 more times.

 

Pour over about 375 ml brandy (the liquid should barely cover the fruit). Seal the jar with a lid.

 

Let sit for at least one week before eating.

 Ingredients

  • 8 oz cream cheese softened
  • 1/2 cup no sugar added pasta sauce I use Classico Roasted Garlic
  • 2 cups cooked crumbled sausage about 1 pound
  • 1 cup shredded mozzarella
  • 1/4 cup parmesan cheese

Instructions

  • Preheat the oven to 400. 
  • Spread the cream cheese in the bottom of a deep dish pie plate. Spread the tomato sauce on top. Top with the cooked sausage. Sprinkle with the mozzarella and parmesan. 
  • Bake for 15 minutes until bubbly and golden brown around the edges.

Notes

If you need to cook sausage for this recipe do that first. I like to cook and crumble a big batch and freeze it in 1 cup portions for recipes. I cut the casings off with scissors (so much easier than trying to squish out the meat), put them in a big frying pan coated with cooking spray, and just cook until brown. I break up the pieces with a potato masher a few times while it cooks.

Hee as usual @RespectLife  my answer comes with a caveat . . . yes the best result for this salad is with a runny yolk but I unfortunately messed that up but it is still a delicious salad.  I even threw in a leftover hardboiled egg I had in the fridge.  I know the combination sounds odd, but I saw it on a cooking show way back in the day and I just love it.  Also, I don't find it works well unless you use those spring greens.  I've tried it with both ice berg and romaine but I think it's the delicacy of the spring greens that brings things together.  The only thing missing was a sprinkling of blue cheese and maybe some toasted pecans . . . Smiley Wink

@RespectLife  I know it sounds weird and I thought the same thing but it is truly delicious.  The egg yolk plays nicely with the balsamic/EVOO dressing, a nice light and tasty salad and if you have good bread on hand, culinary nirvana! Smiley LOL

Today I am making a beef stew with sweet potatoes.  Never saw that combo before so I thought I would give it a try.  Will post the results/recipe as I think adding SP is a great and tasty idea.
