Toasted Marshmallow Cocktail

 

 

YIELDS: 1

 

PREP TIME: 5 minutes

 

 

Ingredients

 

  • Marshmallow crème
  • Splash of pure vanilla extract
  • 2 tsp. simple syrup (to taste)
  • 2 oz. hot espresso
  • 1 oz. vodka (marshmallow flavored or plain)
  • Ice, for serving
  • Toasted marshmallows, for garnish

 

Directions

 

    1. Place 2 to 3 heaping spoonfuls of marshmallow crème in a glass. Add vanilla and simple syrup.
    2. Pour espresso over marshmallow mixture and stir vigorously until completely combined, about 1 minute.
    3. Add vodka and ice and top with toasted marshmallows.

EASY TOASTED MARSHMALLOW ICE CREAM

 
Only THREE ingredients in this simple no-churn ice cream recipe! It’s creamy, sweet and full of toasty deliciousness.

Ingredients 
  • 1 cup whipping cream
  • Âľ cup sweetened condensed milk
  • 2 cups mini marshmallows

Instructions

  • Beat whipping cream on medium speed for about 4 minutes or until it starts to form soft peaks. Reduce speed to low and add in sweetened condensed milk and beat until combined.
  • Broil marshmallows on a foil lined baking sheet for 1 to 2 minutes until toasted. Careful: they burn QUICKLY so you need to babysit the oven. Quickly add the toasted marshmallows to the cream mixture and stir.
  • Pour into a freezer safe container. Freeze for at least 8 hours before serving.

Observed annually on August 31st, National Trail Mix Day honors the mix developed as a healthy snack for long hikes.

Filled with nuts, dried fruit, and grains, trail mix packs a boost of carbohydrates when the body needs it most. The nuts supply good fats as well as sustained energy, too. Since it’s lightweight, trail mix travels easily, as well.
 
On long trails or while camping, trail mix keeps without spoiling since most of the ingredients are dried. 

Two California surfers claim the creation of trail mix. In 1968, they blended peanuts and raisins for an energy snack.

 

However, in the 1958 novel The Dharma Bums written by Jack Kerouac, the two main characters mention trail mix when planning meals for their hiking trip. 

 

Trail Mix Tips

 

Regardless of who created trail mix, the food is an integral part of camping, hiking, and outdoor life. When preparing for a hike, selecting a favorite combination of ingredients comes down to balancing flavor and nutrition. Some factors to keep in mind:

 

  • Portability â€“ Be sure all the components can withstand heat and bouncing around. For example, potato chips and caramel baking bits probably won’t survive the heat. However, pretzel rods, M&Ms, and other candy-coated chocolates hold up under stress.
  •  
  • Protein â€“ Choosing the right nuts and seeds adds healthy proteins and fats, too. Consider adding these top protein-producing seeds and nuts to your trail mix:
    • almonds, peanuts, pistachios, hemp, pepito, sunflower, flax, sesame, chia, cashews, walnuts, hazelnuts, pine nuts

  • Salty & Sweet â€“ Not only does the flavor factor increase but the salt, along with drinking plenty of water throughout your hike prevents dehydration. When we sweat, we lose essential electrolytes, and trail mix helps to replenish them. The salt comes from the ingredients already added to the mix. There’s no need to add more. And the sweet? Well, that all depends on your tastes. How much additional glucose do your physical needs require?

  • Spice â€“ Ramp up the flavor profile with some spice. Here are a few combinations to try:

Not only does this trail mix taste better than most store-bought brands, but it’s way cheaper too! Similar in texture to a deconstructed KIND bar, this oven-baked mix features maple glazed nuts, tart dried cherries, and dark chocolate chips.
 

INGREDIENTS

  • ½ cup raw almonds
  • ½ cup raw pecan halves
  • â…“ cup unsweetened coconut chips
  • ÂĽ cup pepitas hulled pumpkin seeds
  • 3 tablespoons maple syrup
  • â…› teaspoon sea salt
  • ÂĽ cup chocolate chips
  • ÂĽ cup dried cherries

INSTRUCTIONS

  • Preheat the oven to 300F.
  • In a medium bowl, mix the almondspecanscoconut chipspepitasmaple syrup, and salt. Stir to evenly coat.
  • Spread the mixture on a lined baking sheet.
  • Bake for 20 minutes. Remove from the oven and let cool.
  • Transfer trail mix to a clean bowl and add the chocolate chips and cherries.

NOTES

STORAGE TIPS This trail mix will store for several days in an air-tight container at room temperature (longer if kept in the fridge). Once we’re done making a batch, we like to store them in individual portions in a reusable baggie - these ones from (Re)Zip are perfect, or we’ll use a small Stasher bag. You could also store the whole batch in a tupperware container.

Blending the sweetness of honey, the spice of sriracha, and a savory-salty pop, this quick and easy trail mix brings together a trifecta of flavors to make a highly-cravable trail snack.
 

INGREDIENTS

  • ½ cup cashews
  • ½ cup peanuts
  • 1 cup corn Chex cereal
  • 1 cup pretzels
  • 2 tablespoons honey
  • 2 tablespoons Sriracha
  • 1 tablespoon neutral oil
  • 1 teaspoon liquid aminos or soy sauce
  • Pinch of salt

INSTRUCTIONS

  • Preheat the oven to 300.
  • Add the Srirachahoneyoil, and liquid aminos/soy sauce to a medium bowl. Whisk to combine. Add the Chexpretzelscashews, and peanuts to the bowl, and mix well to completely coat with the Sriracha-honey sauce.
  • Spread mix onto a parchment paper-lined baking sheet and sprinkle with salt.
  • Bake for about 18 minutes (check after 15 to make sure the mix isn’t burning – ovens may vary), then remove from the oven to cool.
  • Once cool, portion into zip-top bags.
 

NOTES

To make this gluten-free: Use gluten-free pretzels and liquid aminos instead of soy sauce.
