     This is such good news!  We're still praying that there will be no scaring and no need for grafts.

     It was great to hear that you heard him singing.  Sounds like that lad's defintely on the mend!

He def is improving!  Although he gets frustrated with his hands.  They have plates on his palms and then they are wrapped, quite large almost like a cast.

 

He can't grip things very easily and gets a wee bit of a temper!  He was trying to pick up blocks and when he couldn't....he gave everything a whomp with his arm.  Poor little guy....

 

Doctors said he might get one or both arms/hands freed next week.  They will have to see when they examine the wounds.

@RespectLife   I am so sorry to hear about your Noah.  What a scary experience for all of you and especially him.  I'm keeping him in my prayers for a speedy and full recovery.

 

Nothing new to report here.  It's hot, but I don't go out much.  There's just not that much to do and none of my friends are interested in doing anything as their young children are not vaccinated so they are managing their activities.

 

I plan to go to NY to visit family soon.  I have to wrap up a project at work first.  I'm not thrilled about all those rest stops, but I'll manage.

 

No CIJ for me.  I was hoping to get to the stores to see about a new tree for this year.  I hate the one I have.  It was a clearance item from QVC and everything about it annoys me.  LOL  I need to see one in person before I buy again.

It has been an awful experience but we are so thankful that he is healing well!

 

We had a 12 hr trip to Iowa for the conference.  Had to stop 3 times for gas.  Serves me right for having an SUV!  LOL

 

All the rest stops were very busy....lots of people seem to be travelling.  No one wore masks but everything looked clean and there were crews mopping and wiping the rest rooms every stop.

 

The tough part was the CRAZY price of gas!  Couldn't believe we paid $3.50 in Illinois and Indiana!  For once, NY was the lowest price.  Even PA was super high.  The further we went the higher it got.

 

Once we were in Cedar Rapids, IA....it was $2.99 (lower than here)

Life is full of challenges.  We are ok and I am thankful everyday for our health and the health of our kids, even though it may be a "different" health.  

 

How are you and our dear Mr. Writer doing?  I bet it is really hot now where you live.  The St. Louis area is miserable and we have so much of that haze caused by the western fires.  Sun rise and sun set is orange.  Looks more like a harvest moon; not sure how to qualify sun rise just yet.  Our heat indexes are about 104.  It is miserable.  I feel so bad for those forced to work outside in this.  No relief in site for the next few days.

What joyous news!  Thanks be to Him!  I can't imagine how difficult this has been for your family but am so thankful Noah is on the road to repair!

Taco pie

CRUST INGREDIENTS
  • 4 tablespoons butter
  • 2/3 cups milk
  • 1 tablespoon taco seasoning
  • 2 1/2 cups potato flakes (instant mashed potatoes)
PIE INGREDIENTS
  • 1 pound lean ground beef
  • Remaining taco seasoning
  • 2/3 cup fresh salsa
  • 1/2 teaspoon chili powder
  • 1 cup queso blanco 
  • Chopped lettuce and tomato, and crushed Doritos
DIRECTIONS
  1. Pre-heat your oven to 350 degrees.
  2. Make the crust by melting butter in a sauce pan. Stir in milk and allow it to heat for a few minutes. Remove the butter/milk mixture from heat and stir in 1 tablespoon taco seasoning and potato flakes. Stir to combine.
  3. Press the mixture in a 9.5 or 10 inch pie plate.
  4. Bake for 10 minutes, or until it starts browning.
  5. While the crust is pre-baking, cook the ground beef and drain any excess fat.
  6. Stir in remaining taco seasoning, chile powder and salsa.
  7. Pour the mixture into the pre-baked pie crust.
  8. Bake for 15-20 minutes, or until the crust is nice and golden.
  9. While the taco pie is baking, make homemade Queso Blanco, alternatively, you can buy queso from the store.
  10. Spread 1 cup queso blanco over the taco pie.
  11. Top with shredded lettuce, tomato, and crushed Doritos if desired, and serve. It will be tricky to get the pieces of pie out of the dish as it’s more of a crumbly crust than a firm one…but it’s so delicious!

Mustang,

     Interestingly enough, we have had a cooler and rainier summer than normal.  At times, it has been Florida humid, which is very unusual for us.

     Because of all the rain and cooler temperatures, the grass we planted in the spring has done well.  We were even able to plant a little more (where it did not come up as full as we had wanted) a couple of weeks ago which is unheard of for July.  Go figure!

     You may have heard about a drug-resistant strain of fungus superbug that has appeared in Dallas and D.C.  Also, some man who recently returned from a trip abroad came back with Monkeypox (deadly with no known treatment).  I feel so bad for the healthcare workers in Dallas; they seem to have to treat all the bad stuff (like Ebola a few years ago).
