Good morning!

 

Well the snow all melted in a day or so....back to grass and clear roads.

 

Anyone baking cookies this year?

 

I was going to scale WAY back since I didn't think my kids would be taking any to work...you know...touching food in a tin...but they both said PLEASE bake.  Their co-workers will be sad not to have any as I have sent them for many years now.

 

I have an extra tongs I will send along with the tin, so they can use it to select cookies instead of their fingers.  Just hope they are smart enuf to sani the tongs after they use them.

     How about putting three or four cookies in individual ziplock sandwich bags in the breakroom so nobody would have to reach inside a tin? 

     Another alternative would be to have your kids come into their offices a little early and drop off the bagged cookies at people's desks (wearing gloves and a mask) before everybody comes in?    Even if not all of the coworkers want some cookies, there will be someone they know with whom they can share them.

     You always are so thoughtful.  I bet your kids' colleagues will love those cookies!

     By the way, what kind of cookies are you going to make this year?  We are still doing a lower carb/lower saturated fat diet, so I thought I would try to make a ground almond cookie that supposedly is enjoyed by the British Royal family.  I think if I substitute Swerve or Splenda for the sugar, I can make it work.  Just to let you know, I will not be doing as fancy a decorating job as the cookie in the picture. 

     If you or anyone else has any good low carb/low saturated fat recipes, I'd love to see them.

 

ROYAL FAMILY CINNAMON STARS COOKIES


INGREDIENTS

  • 2 cups of Confectioner's Sugar (or Swerve Confectioner's Sugar Replacement)

  • ½ cup of egg whites

  • 2 tbsp of lemon juice

  • 2 ¼ cup of ground almonds

  • ¼ cup of mixed lemon and orange peels

  • ½ lemon, zested

  • 1 tbsp of ground cinnamon

  • ¼ tsp of ground cloves

DIRECTIONS

  1.  Purée or chop the mixed peel into a paste-like texture using a food processor and set aside.

  2. Then, whip the icing sugar and egg whites with lemon juice into a soft peak meringue. Take 1/3 of the mixture out and keep it aside to top the dough with in a thin layer later.

  3. Add the remaining ingredients into the larger part of meringue and combine until it turns into a dough-like texture.

  4.  Knead the dough together with your hands and flatten it onto a baking-paper-lined tray. Placing a sheet of baking paper on top, roll it down to about 1cm thickness.

  5. Remove paper from the top and spread a thin layer of meringue over the dough. Keep it as smooth as possible.

  6. Rest the sheet of dough in the fridge for a minimum of 1 hour.

  7. Remove the dough from the fridge and start cutting it into shapes with a knife or cookie cutters. Be creative. Stars and diamond shapes work well. To use the cinnamon star cutter or round cutter, a bowl of hot water is required. Dip the cutter into the water first and in between cutting the shapes. This helps to release the cookie easily from the cutter.

  8. Bake in the oven at 320 degrees for 12 to 15 minutes. If possible, it’s best to bake with bottom heat only so that the top stays white and does not discolor. The cookie is done when you are gently able to lift the edges of the paper. The centre should still be soft and sticky. 

  9. Leave to cool for about 30 min before removing from tray.

Hello my K-team family.  Thanks to @momtochloe and @RespectLife for making my apologies for not being present but please know not only are you all on my mind and in my prayers, your prayers for us in this time of our life is much appreciated.  

 

I'm tired and just am just empty right now.  It takes all I have right now to take care of our family and help my SIL with funeral plans during this pandemic.   Every prayer said is felt and is a help.  I am truly blessed to have you all in my life.  Heart
