Good morning
It's supposed to be a wonderful day today with very low humidity, so I plan to get out and about and enjoy it.
Update on my cooking from yesterday:
Lighter Bacon Cheeseburger Dip:
This is really good. I think next time I will use half the mustard as the brand I buy is pretty strong. I made it with full fat, grassfed dairy.

The Cuban Pork is really good. The roasts cooked beautifully and look just like the picture. The marinade really flavors the roast.
However, the marinade carmelized in the roasting pan. I don't know if it's because of my cheap roasting pan or it needs to be at a lower temperature. But next time will add stock to the marinade as it cooks down so that it doesn't do that. I wasn't watching it so I didnt' realized it had gotten to that point until it was too late.
Luckily it was a cheap add on from my old Hard Anondized set from back in the day. Honestly, I wasn't sure I still had it down in the basement. But I did. Now I get to buy a new, better quality roasting pan ;o)

@VaBelle35 your food sounds and I bet smells wonderful. I'd love to try that pork recipe but I think you would need a full oven to make it but it sounds great . . . ![]()

There's no reason why you can make the pork in a crock pot. It won't get the crust on it, but the flavor would be wonderful. I am thinking of trying it that way in the future.

Thanks for this @VaBelle35, today I am making a chicken dish I found on this month's recipe swap but I would like to try that recipe but I do have one more question. Do you think you could swap out a pork roast for a pork shoulder? I know I would be missing some of the fat but I only have roasts and don't want to go buy another piece of pork until I use up my current supply . . . thanks for any help. I appreciate it!

@momtochloe I'm pretty sure Roast/Butt/Shoulder are all the same cut, just named differently. A tenderloin would work, but you have to watch it carefully as they are lean and dry out in like 5 minutes.

These are going back. They hurt just putting them on. I didn't even get them zipped and I knew they would not work. That first opening need to be about 1/4" wider. It just cuts in even withnylon knee highs.

Sunny & breezy here, humid but not quite as bad as it's been lately. Thankfully!!!
So, gotta run & make a payment & then its laundry, dishes, picking up & cooking. Not sure what yet, I think I'll throw some mac & cheese into the Perfect Cooker cut my watermelon & I have corn & tomatoes. Sounds like the makings for lunch right?!!!

Hi @ChiliPepper glad your day is off to a good start . . . I was just admiring my Dollar Store purchase of an adorable doorknocker charm for the fall (it has jingle bells shaped like acorns . . . tee hee!).
I also thought of you earlier as I snagged a small package of those cube steaks so I would like to try your crock pot meal from earlier this week.
@I have a meal I found on the recipe swap from @walker in the oven as we speak and it smells terrific (you bread marinated chicken breasts in ground up stuffing courtesy of that nifty little pull chopper and then baste them in butter, yum!). ![]()
