Question about duck sauce pork, please

I quickly looked for this recipe and think I may have seen it while doing a recent search. The two pork roasts I have are each about 4lbs. They are both boneless pork loins. What do you think about using them for shredded pork? My thought is they might be too lean to use. What do you think? I REALLY want to try the duck sauce recipe. thanks for any input you have. Cece
