I only make turkey breasts. I put lots of butter under the skin, rub down with olive oil & sprinkle with Herbes de Provence or some other poultry seasoning. My Nesco's have the fan so I use the fan at the beginning & turn off before it gets done. I do start it at 400° & turn down to 325°. I use a Maverick thermometer that I insert from start & when the temp gets to about 170° I take it out & let it rest. I can turn on the alert on the thermometer & it beeps before it gets to your set temp. I also set it on the rack.
