Great Idea House Cat. I'd like to see the results too. We need to do a variety like you'd find in a cookbook. I love the breakfast Danish recipe I have. Let me know when you're ready for that one. I'll keep checking back for that chapter.

French Meat Loaf (one of my family's favorites!)

2 lbs. ground beef
2/3 c. dry bread crumbs
2/3 c. chopped shallots
2/3 c. Gruyere cheese
3 Tbsp. Dijon mustard
1/3 c. milk
2 tsp. thyme
4 eggs, hard boiled
Preheat oven to 375 degrees. In a large bowl, combine the first 7 ingredients. Pack 1/2 of the meatloaf mixture into a large <var id="yiv9707067057yui-ie-cursor"></var>greased loaf pan. Lay down the hard boiled eggs on top in a row lengthwise, end to end. Cover with remaining meatloaf mixture so eggs are completely covered. Bake uncovered 20 minutes. Spread 2 more Tbsp. Dijon mustard on top and bake an additional 25 minutes until done.
