QUICK & EASY LEMON BARS

1 angel food cake mix (16 ounces 1-step)

1 can lemon pie filling (22 ounce)

1 cup coconut (optional)

Mix the angel food cake mix and the lemon pie filling together. Add the coconut. DO NOT ADD ANY LIQUID!

Spread the mixture in a 10 x 15 inch pan. Bake for 30 minutes in a preheated 350 degree oven. Cool.

Frost with a cream cheese frosting, a whipped butter frosting or just dust with powdered sugar.

CREAM CHEESE FROSTING

8 ounces cream cheese, softened

1/2 cut butter, softened

2 1/2 cups powdered sugar

1 teaspoon vanilla

Lemon zest, for garnish

Combine all ingredients until blended well. Frost bars and sprinkle with lemon zest. Cut into bars. Cover and refrigerate overnight (to inhance flavor).

CREAM CHEESE FROSTING

1 (3 ounce) pkg. cream cheese, softened

6 Tablespoons butter, softened

1 teaspoon vanilla

1 Tablespoon milk

3 cups powdered sugar

Beat together all ingredients until smooth and creamy. Frost and cut into bars. Refrigerate.

WHIPPED BUTTER FROSTING

3/4 cup white sugar

3 Tablespoons flour

1 egg, beaten

3/4 cup milk

pinch of saltr

3 Tablespoons powdered sugar

1 teaspoon vanilla

1/2 cup butter, softened

1/2 cups nuts, chopped

Mix dry ingredients and add milk; mix well. Add beaten egg and cook until thick, stirring constantly. Let cool. Add 3 Tablespoons powdered sugar. Whip butter for 5 minutes and add. Spread on cooled bars. Sprinkle with chopped nuts. Cut into bars and refrigerate.
