I got a new cookbook called The Sweet Little Book of Cupcakes, and it looks like a winner - nice recipes, beautiful pictures, and even decorating ideas and a built-in bookmark. This recipe is different from the others in that it's intended for dogs, but darned if these don't sound good for people too!

Pupcakes

1 1/4 cups rolled oats

1 cup buttermilk

2 tsp. ground cinnamon

1 tsp. ground ginger

1 large egg

1/4 cup honey

1/2 cup unsalted butter, melted

1/3 cup brown sugar, firmly packed

1 cup all purpose flour

1 tsp. baking powder

1/2 tsp. baking soda

Preheat overn to 350.

Combine oats, buttermilk, and spices in a large bowl and let mixture stand for 1/2 to 1 hour.

Line 24 mini muffin tins with paper liners.

Add all remaining ingredients to the oat mixture and mix until thoroughly combined.

Using a regular spoon, scoop batter into the muffin tins.

Bake until firm and golden brown, about 20 minutes.
