yield 7 dozen.

Did this yesterday and it's the kind hubby can chew easily.

1, 8 oz cream cheese pkg., softened

1.5 C packed brown sugar

1/2 C sugar

2 eggs

1C canned pumpkin (real)

1 tsp. vanilla extract

3.5 C all-purpose flour

1.5 tsp. pumpkin pie spice

1 tsp baking soda

1 tsp salt

1/2 tsp baking powder

FROSTING:

2 C confectioners' sugar

1/4 C butter, melted

1 tsp vanilla extract

2-3 Tbls boiling water

2 C chopped pecans

In a large bowl, beat cream cheese & sugars until smooth. Add eggs, one at a time, beating well after each addition. Beat in pumpkin & vanilla. Combine the dry ingredients; gradually add to pumpkin mixture and mix well.

Drop by rounded teaspoonfuls 2" apart onto ungreased baking sheets. Bake at 350 degrees for 10 minutes or until golden brown. Remove to wire racks to cool.

**my note, I did 2 baking sheets at a time. These make 7 dozen cookies, so some in baking, while some cool or go on the next sheets in. No time wasted that way.

In a small bowl for the frosting: combine confectioners' sugar, butter, vanilla and enough water to achieve frosting consistency. Frost cookies and sprinkle with pecans, if your family likes the pecans and can have them.
