I had some leftover pumpkin puree in the fridge I needed to use up so I made pumpkin pie yogurt with it. Plain whole milk Greek yogurt, pumpkin puree, pumpkin pie spice blend ( I had made some up a few weeks ago with cinnamon, nutmeg, ginger and allspice), agave syrup, vanilla extract and almond extract.  I did a tester batch with a small amount in a bowl and then decided to ahead and use the whole quart of yogurt to make a big batch. 

 

My husband takes breakfast and lunch with him to work and now he'll have something new. I was thinking I'll make some granola with the pumpkin pie spice blend to go with it.  Probably with sliced almonds, walnuts, maple syrup and coconut. I can't make granola without coconut in it. I don't use the sweeted coconut though.

Yum!  Can I have some too?  I love pumpkin ice cream.......the yogurt sounds like a great idea!

Pumpkin ice cream is so good. I used to make that every year for my daughters birthday party.
