@kitty4me   Oh dear.  I owe you an apology.  I did not see your post until just now.  

 

@I came to this thread to thank @Jill Bauer and whoever shared the link to her Pumpkin Pancakes with Salted Caramel and Bacon Syrup.  Expecting snow yesterday, I planned and made these for a pancake dinner last night. The snow failed to materialize, but the pancakes certainly did not let us down.  They are decadent.

 

@kitty4me, if you still want the recipe I offered, I will post it for you; however, Jill Bauer's are better.

@kitty4me  Here is the recipe I used before finding Jill Bauer's.  I will use Jill's from now on.  Again, I apologize for not finding your request sooner.    P.S.  I highly recommend Jill's Salted Caramel Maple Syrup on top of either version of pancake -- or on ice cream, gingerbread, sweet potatoes, pumpkin pie, apple pie, or just in a big spoon.  

 

Pumpkin Pancakes


1 cup all-purpose flour
2 teaspoons baking powder
½ Tablespoon cinnamon, or more to taste
1 teaspoon nutmeg
1 teaspoon ground ginger
1/4 to ½ teaspoon ground cloves or allspice
2 Tablespoons brown sugar
2 Tablespoons melted butter
1 egg
3/4 to 1 cup milk
½ to 3/4 cup canned pumpkin


Combine flour, baking powder and spices in a large mixing bowl.
In a medium mixing bowl, combine milk, butter, egg, pumpkin and brown sugar, mixing well.

 

Add wet ingredients to flour mixture and stir until just moist. Do not over mix. Batter may be lumpy. For thinner batter, add milk.

 

Lightly coat a griddle or skillet with cooking spray and heat on medium. Using a quarter-cup measure, pour batter onto hot griddle.

 

Cook until bubbles begin to burst, then flip pancakes and cook until golden. Serve warm, with maple syrup.

 

Serves 4 (12 pancakes)
