Pumpkin Snickerdoodles? ARE YOU KIDDING ME?!

I found this recipe and I'm planning to make them as Thanksgiving treats for coworkers. The problem is that I'm not allowed to eat them, so I don't want to make a test batch and be tempted.

Has anyone tried this recipe?

PUMPKIN SNICKERDOODLES

Ingredients

1⁄2 cup (1 stick) butter, melted 3⁄4 cup sugar
1⁄4 cup brown sugar
1 tsp vanilla extract

1⁄4 cup pumpkin puree (NOT pumpkin pie filling!)
1 tsp cinnamon
1­2 tsp pumpkin pie spice (depending on how spicy you like them) 2 tsp cornstarch
1 tsp soda
2 cups all­purpose flour
FOR ROLLING:
1⁄2 cup sugar
3 tsp cinnamon

Instructions

  1. In the bowl of a stand mixer, combine the melted butter, sugar and brown sugar with the paddle attachment. Cream for about 30 seconds or until combined. Add in the vanilla and pumpkin and beat to combine. Lastly, add in the cinnamon, pumpkin pie spice, cornstarch, baking soda and flour and beat gently until a soft dough forms.

  2. Refrigerate the dough, covered, for at least 2 hours or until sufficiently chilled. Chilling is mandatory.

  3. Preheat oven to 350 degrees F. In a small bowl, whisk together the sugar and cinnamon. Drop rounded

    Tablespoon­sized balls of dough into the cinnamon sugar mixture and toss to coat. Place 1­2" apart on a silicone

    or parchment lined baking sheet.

  4. Bake for approx. 8­10 minutes, rotating pans halfway through baking time to ensure even cooking. Cool

    completely on the sheets before dusting with any remaining cinnamon sugar topping.

I think it's

1-2 tsp pp spice


 

Yes, that's what I'm thinking, too.

1/2 doesn't sound like enough and 12 is out of the question.

Just checked the webpage....It is 1-2 tsp Pumpkin Pie Spice.

This is the recipe I have made the last two holiday seasons and met with great approval from all who ate them-had requests for the recipe and repeat "donations" of cookies!  Looks like the recipes are close-mine has larger quantities listed on ingredients so assume my recipe makes more.  Don't think you can go wrong with either recipe!

 

Pumpkin Snickerdoodles

Prep Time: 1 hour, 15 minutes

Cook Time: 15 minutes

Total Time: 1 hour, 30 minutes

Yield: 3 to 4 dozen

Serving Size: 2 cookies

 
For the cookies:
  • 1 cup unsalted butter, at room temperature
  • 1 cup granulated sugar
  • 1/2 cup light brown sugar
  • 3/4 cup pumpkin puree
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 3 3/4 cups flour
  • 1 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
    For the coating:
  • 1/2 cups granulated sugar
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • Dash of allspice

In the bowl of an electric mixer, beat together the butter and sugars on medium-high speed until light and fluffy, about 2 to 3 minutes. Stir in the pumpkin puree, then beat in the egg and vanilla.

In a separate medium bowl, whisk together the flour, baking powder, salt, cinnamon and nutmeg. With the mixer on low speed, gradually add the dry ingredients to the wet ingredients. Stir until fully incorporated. Cover and chill the dough for at least an hour.

Preheat the oven to 350 degrees. Line baking sheets with parchment paper or silicone liner. Mix the coating ingredients in a small bowl. Scoop equal dough balls and roll into the sugar mixture. Set on cookie sheet, about 2 inches apart. Dip the bottom of a flat drinking glass into water, then into the sugar mixture and use to slightly flatten the dough balls. Recoat the bottom of the glass in the sugar-spice mixture as needed.

Bake the cookies for 12 to 14 minutes, or until baked through. Let cool on the baking sheets about 5 minutes, then transfer to a wire rack to cool completely. Repeat with remaining dough.

I can only imagine how wonderful the house must smell when they're in the oven!

These Pumpkin Snickerdoodles, are really good.  I have made them for the last 2 yrs.

 

I think you will enjoy them...If you like Pumpkin, Cinnamon, and lots of goodness.

Just canned pumpkin, like Libby's - without seasonings.
