I was given this recipe nearly 50 years ago.  It makes an incredibly rich candy.

 

Potato Candy

1 small potato (no more than 3" in diameter)
1 ½ - 2 ½ lbs. confectioners’ sugar
½ cup butter (1 stick), softened
1 teaspoon vanilla extract
creamy peanut butter

 

Peel and boil potato. Mash, cool and pat out all liquid in potato.

 

With fork, combine potato and butter. Slowly start adding confectioners’ sugar, mixing thoroughly (continue adding sugar until mixture is stiff and you think your arm is breaking). Roll out mixture, onto 10x sugared board, to about ½" thickness. Gently spread peanut butter onto roll.

 

Roll as jelly roll, slice.

 

Store in refrigerator.


Note: Do not use an electric mixer. Also, may find easier to work with if you make 2 rolls from one batch.

My mom made this every year at Christmas.  I did too when my kids were still at home.  

I found it hard to mix, but it was worth it.

The only time it's ever available around here is for St. Patrick's Day.

My mother made this candy with the potato, and without the potato, using canned evaporated milk mixed with the confectionary sugar.   Good either way, but I haven’t had any for 20+ years.

I have never had potato candy. My husband's grandmother use to make it for Christmas. I am kind of afraid to taste it but maybe I will try one of these recipes for him. Thanks for sharing.

I think the secret to making this candy is making sure your mashed potatoes are dry, not moist as you would serve them as a side dish.

Me, too, we made this candy in high school Home Ec class.  Our version mixed the peanut butter in with the potatoes.  Since then I've seen versions where the peanut butter is spread over the potatoe base.  The candy is then rolled and sliced.  Just the last few years I've started seeing it in cookbooks and articles as "Irish Potatoes" and it's associated with St. Patrick's Day.  My cousin married into a Greek family -- her mother-in-law made this for Christmas and no one on our side could believe it was based on potatoes.
