Pot Roast with veggies made in the crockpot, anyone?

DH is hungry for a pot roast. With this heat and humidity I want to do it in the crockpot. He loves potatoes, onions and carrots in a pot roast.

 

Has anyone made one like this with the veggies and how?

 

I have always just used the one with Lipton onion soup mix and no veggies when I do it in the crockpot.

I make it all the time in the pot roast. I brown the meat. Put it in the crockpot w/dry onion soup mix and canned cream of mushroom soup. I also add a soup can of red wine.

DH prefers mashed potatoes but you can add potatoes at some  point. Just make sure you parboil them first. Rest of the veggies can be added at anytime.

A few years back someone posted on here The To Die For Roast, my DH loves it made this way.  Put your meat in crock, I do not brown it, then add carrots potatoes,onion.  In a small bowl with lid mix together brown gravy packet, ranch dressing packet, Italian dressing packet, shake this together well, sprinkle on top of veggies and roast in crock, add some water, I add about half cup cover and cook on high 8 hours.  Cook time is different for all crock pots.

I uses the Lipton Onion packet, a can - dare I say it Cream of Muchroom soup (I like the Golden Mushroom), mix both those with 1 soupcan of water.  I always add the potatoes, carrotts, onion too but put them on the bottom of the crockpot before putting the roast on top.  Might be a good idea to cut the potatoes up - maybe in half - as the crockpot takes a while fully cooking the vegetables.  Low for 6 hours or so.

I vote CROCKPOT!!!!  I thought the same thing - a crockpot recipe in the middle of summer??!!  OH YEAH - I did pulled pork yesterday in mine.  Had pulled pork sandwiches with cole slaw that I made to go with, fruit with yougurt to accompany. 

 

SO GOOD!!!  And it did not at all heat up my kitchen.  Love to use the crock, SO easy - it's a dump & run for sure.

 

I say go for it - your hubby will be so pleased.

I do my roast and veggies in the crockpot too!! I throw my potatoes and carrots in the bottom, add the roast and then top with Lipton Onion (dry) soup mix which I mix with a can of cream of mushroom soup and a little bit of water/milk. I do not precook my veggies or meat. Cook for 6-8 hours on low (my crock gets way too hot on high) Delicious!!

Three Envelope Roast is one of my favorite recipes for the Ninja cooker, but it can also be made in a crockpot.  You can leave it alone and just do the meat or add some veggies (onions, carrots, potatoes) and have a one pot meal.

 

Ingredients:
3 pound beef roast such as chuck roast
1 envelope of dry Italian salad dressing mix
1 envelope of dry ranch salad dressing mix
1 envelope of dry brown gravy mix
2 cups water

Instructions :
Put the water in a measuring cup that is larger then the amount of water you are using. Now add and mix all three seasoning envelopes with the water. Mix until blended completely.
Brown the roast (if desired).  Transfer the meat to your cooker. Pour the water and seasoning mixture over the roast.  Cook it on high for about 4 hours or on low for 8 hours.

Thank you so much ladies, knew I could count on you. These recipes are exactly what I was looking for.

 

I take my crockpot as well as my nesco roaster out on the patio(covered) and plug it in out there so it doesn't add any heat at all to the house since my both AC window units are old. We eat in the house, too hot to eat outside but making it outside works great in this heat and humidity so, thanks again ladies.

I agree. Being we only have 2 window AC units and both very old they don't throw out a lot of cold air but do take out a lot of humidity but I can't use the oven or stove top(how I normally make my pot roasts, stove top or the poor AC units don't do much at all so, much easier to do this outside on the patio than bring the food in to eat it, works for us.

 

These ladies here all have great recipes and are         all greatly appreciated that's for sure.

I make this sort of thing and liiterally throw in different things every single time.  Some variations on what people have already mentioned might be a can of Campbell's tomato soup or mushroom or celery soup, Lipton's Beefy Onion soup  mix,  Worcestershire sauce, Montreal Steak Seasoning, a packet of McCormick slow cooker beef stew or pot roast mix,  red pepper flakes........

 

 I add all kinds of vegetables--celery, onions, carrots,  peas, green beans, corn, lima beans, a can of tomatoes--whatever happens to be in the freezer or pantry.

 

I slow cook it in the oven (after giving away my crockpot that cooked too fast and too hot), and as long as the meat gets a chance to cook long enough to really tenderize and almost become shreddable, my husband loves it.
